What’s for Dinner Tonight?

Made an “executive decision” and decided to eat up the tikka masala chicken this week and make butter chicken later as a freeze ahead meal. Funny how similar ingredients easily create a new dish. Much as I’d love to have the masala with rice decided to have it atop cauliflower instead. Finishing off last night’s mango as dessert.

Last night everyone had plans to be "out and about" at dinner time (I teach until 9pm on thursdays, for example). DD and the little guy had a "dinner date" at Olive Garden so they brought home ziti al forno for DH and me to share.
Tonight? DD is making roasted tomato soup and grilled cheese for them, but DH and I are hitting the road for a 4 hour drive to Massachusetts for the weekend. It's my 50th high school reunion, so supper tonight is a casserole buffet (so we can all sit around and catch up) and tomorrow night will be a dinner-dance at a country club. No idea what's on the menu but IIRC, it was pretty good at the last reunion, 5 years ago. Sunday? We'll grab what we can, wherever we might be.
 
Leaving for Wildwood (the shore) on Sunday for a week so trying to clean up/out the leftovers before we go so it's sort of find what you can and cobble it together to make a meal. We do pretty well taking advantage of happy hour specials and bringing breakfast and snacks with us when we head there so we should keep spending down. Looking forward to it despite the weather predicted.
 
Somehow got it into my head that I had to go to Stew Leonard’s this morning and so I did. Had no idea what the procedure was for getting on a Metro North train and somewhat peeved the conductor but he was on the money when I got off in Yonkers so all was well.

Many changes since I was last there but still decent prices on the goods I wanted. Tried to focus my buying but somehow apple cider donuts and veal scaloppine fell into my cart-wonder who put them there? 🤷🏽‍♀️

My home attendant has apparently fallen under my spell so she bought a turkey for the holiday season.😆 She left it in my fridge overnight and we’ll spatchcock it tomorrow and then she can freeze it for later use and take it home.

You have no idea how normal this felt going to the supermarket; just enjoy what you’ve got when you have it.

I bought a ground chicken Parm meatloaf in the prepared food aisle and that became dinner with carrots and string beans. A portion of a store bought fruit salad became dessert. Read an article in today’s Times that reminded me to eat more fruit so trying.

Chicken pot pie with rice tonight. I’m back to working on the very full freezer. Using half a roasted and frozen chicken and a half bag of frozen corn and a half bag of frozen peas.

I know, isn’t it fun?! We used to go about once a month as well and take DGD after school; she never saw a supermarket so large before and all the silly kid friendly animatronic exhibits. One of the owners went to uni with Bob Iger and I think it rubbed off, lol.
Planning to return the start of December and can’t wait 😊.

Spent the day playing with a new toy: an Anova vacuum sealer. Packaged new purchases and items already frozen. Great way to increase space in the chest freezer. After I finished didn’t feel like cooking so I reheated tikka masala chicken with cauliflower (again), steamed carrots and zucchini.
