What’s for Dinner Tonight?

It’s cold and icy here. I’m ready for spring!

It’s our anniversary and we got married in Mexico so I made tacos. Best I could do on a Tuesday after being in the office today.

I’m hoping Sheetrock will be done by the end of the week and maybe flooring next week. Thinking we are about a month out.
Happy Anniversary!!! It is frigid at home. Happy to be in Florida but worry about my poor MIL taking the dogs out.
 
Our hotel restaurant had an incredibly limited menu tonight, but that's okay. By the time we got here, we were over being out in the cold for the day & didn't want to go back out. We ordered a charcuterie plate & cold wrap. (They only had 5 options that were all cold foods. :confused3 ) We shared the charcuterie plate, which was very good, & ended up bringing the cold wrap to the room for me to have for lunch tomorrow. We also ordered a piece of strawberry cake "to go" that we may or may not eat tonight.
 
We had a couple menu items last night. The kids and I had chicken Alfredo and freshly baked bread. Dh will eat it, but isn’t really a fan so he got the one lonely shell steak I had hiding in the freezer. I made him some orzo with garlic butter and Italian seasoning, plus a a salad.
Tonight we’ll be having pork chops. Not sure what else as dh is doing the cooking tonight.
 
That sounds perfect for this weather! I’m thinking of making some grilled cheese and tomato soup—comfort food at its best. Might throw on a movie too. What’s your go-to soup?

We love soups. I don't really have a go-to, but we probably have broccoli cheddar most often. If we're having it as the whole meal, I usually load it with baked potato, bacon & DH adds a little more cheese. I'll add green onion, if I have any. I love tomato soup & grilled cheese, but we don't eat tomato based soups as often as we used to. They have a tendency to give us heartburn in our older age. Yesterday, we had an excellent potato leek soup for lunch. I've never tried making it, but I'm going to fix that, when I have a chance to cook again.

I had to look up shell steak. That must be regional. Apparently, it's what we call a bone-in New York strip. It's funny how we have different names for the same thing in this country. I still remember the first time I saw Dolphin fish on the menu in Florida. I was horrified, but had to try it anyway. What a disappointment to find out it wasn't Dolphin at all. :rotfl:

IDK that it's so odd to have many different names for the same thing, especially when you consider the melting pot aspect of our roots and the fact we're nearly the same land mass as Europe. Even looking at countries such as Spain, Italy and France they're not exactly monolithic in culture in quite the way they might seem at first glance at highway speed.

I agree that having different names for things makes sense. It's just funny in the way that it can cause so many misconceptions. I.e. my Dolphin story.

I've always viewed the European countries as totally seperate entities, due to their cultures. To me, that's what make it's so neat that you can easily visit a few of them in one trip. Our states are too similar to create the feeling that you're in a totally different world in a matter of a few days. Admittedly, being an American shapes my view on that. I suppose NYC, the mountains of North Carolina, the plains of the midwest, etc. would seem like totally different worlds. They're harder to travel between in a short amount of time though. Plus, the cultures aren't as different as Europes.

Have a medical appt tomorrow so made a pot of chicken and veggie soup in advance. Added dill to it because one o’ youse put a bee in my ear. Thank you!😎

Eating dinner early tonight since I knew I’d make a mess in the kitchen making a new to me dish: pork tonkatsu with carrot - radish slaw. Was really good and I’ll make it again on Friday for my home attendant and me ( she didn’t grumble when she saw the amt of dishes to be cleaned) which should end the remaining pork cutlets.

ETA the pork cutlet recipe said use an egg wash for breading and since eggs are so expensive, I substituted a coat of mayonnaise. Worked fine!
 
That sounds like the perfect evening for some soup! I love making a big batch of chicken pot pie soup and freezing portions for days like this. I’ve been into making stews lately too—beef stew with lots of root veggies is my go-to. It’s nice to have something warm and comforting when the weather’s like this.
 
It’s still colder here than it should be so I wanted something warm and comforting for dinner. I made a chicken pot pie (using up some leftover roasted chicken in the freezer) with rice.

I left work on time today and got home before the contractor left. He said the Sheetrock should be done tomorrow. They need to finish hanging it in the laundry room and then finish the tape and mud. I feel like this might actually be done someday! We started in December.

Let's see.. Monday night I made a recipe that DD found in a magazine, Golden Chicken. I didn't enjoy it. It was chicken with a mustard/turmeric cream sauce. Everyone else liked it, so maybe it's just me. Ever since I was sick a few weeks ago, most foods have tasted weird.

Tuesday night... Buttered shrimp is what the resident 8 year old called it, but I called it almost-scampi. I diced up an onion and a red, orange, and yellow pepper, and 10 cloves of garlic and sauteed this in olive oil with Italian seasoning. Then I threw threw in 2 pounds of shrimp (frozen/thawed) with about 4T of butter, some salt and pepper and let it "get happy," as DD would say. I finished it off with the juice of about 1/2 lemon and served it over linguini. Man, was that good!

Tonight was simple: Sirloin steak, NoodleRoni shells with white cheddar cheese (from a box), and frozen petite peas. It went together quickly and made minimal mess in the kitchen. Simple, but tasty.
