Pulled the rest of the strip steak out of the fridge to cook tonight. Making a poivre sauce to go with it and a simple green salad. Took a portion of butternut squash and ginger soup out to start with a cup of it and that should be enough tonight.
Ended up being crispy chicken strips and mashed potatoes with chicken gravy.We're exhausted from shoveling all the snow for days now. So tonight is Crispy chicken strips and mac n cheese.

Need inspiration for tonight's dinner. I did pick up asparagus so I can participate in the fiesta you've all been having with it, but I don't think I can spin it as the only item on the menu tonight. Although I wouldn't be too heartbroken over it.

Bought a rotisserie chicken from WF the other day and finally decided what I’ll do with it. Today it’ll be curried chicken salad aka Coronation Salad served in a lettuce cup. That’ll take care of about half of it with ease; love that!

It’s our anniversary and we got married in Mexico so I made tacos. Best I could do on a Tuesday after being in the office today.
I’m hoping Sheetrock will be done by the end of the week and maybe flooring next week. Thinking we are about a month out.
