I'm shocked that there is no vegetarian resturants

I think it is because a restaurant that serves meat but also has good vegetarian choices has more universal appeal than one that serves only vegetarian food. Most of the vegetarians I know have non-veggie family members, and many enjoy dining out specifically because it is easier for everyone to eat to their own preferences than it is when cooking at home. In other words, the meat-eaters feel like they get their fill of vegetarian dining at home, when to do otherwise would require preparing two main courses, and aren't especially interested in vegetarian dining while traveling.
 
Actually, a concept that might work as a sit down or CS would be a "Disney's best Veg" site with the best vegetarian and vegan dish from each park (CA, FL, France, China, and Japan) spotlighted...for a CS, that could be 5 dishes (split with 2 vegan, 3 vegetarian) with 2 kid meals (1 vegan, 1 vegetarian)...a sit down might go to 5 apps, 10 main dishes, and 5 desserts (and 4 kid options)...

I mean, there are a lot of princesses who speak to animals or have animal friends, so I'm sure you could theme to one to make it even more positive:)...plus, I'm sure one of the Disney animal characters is an herbivore:)...they've got tons to pick from...

I mean, I just finished a cruise a few weeks ago...and I can tell you that when you are either stuffed from a previous meal or feeling a little motion sick, you want light fresh food...my waiter was shocked at what I ordered a few nights, but it's what I wanted...and it was perfect...

As a vegetarian I would love this but given the food at Disney I know if will not happen any time soon. As an Australian I see how much better we do for vegetarians, vegans, gluten free etc than Disney does. While I know disney will make me something, I really miss the menu markers when I’m there. Most Australian cafes and many restaurants mark their menus (v, gf, etc) so you don’t have to ask for a separate one to work out which items are vegetarian. I’d like Disney to start with this. My family is vegetarian so we will not eat somewhere with only one vegetarian option as we have different tastes. The idea that ‘one or two’ vegetarian options is enough to me shows the cultural differences between Disney patrons and my home (small city approx 400,000 people and I can think of at least 5 vegetarian or vegan places).
 
I'm a little confused by the idea that if the whole family isn't vegetarian, no family would be interested in eating at a vegetarian restaurant. Vegetarian dishes can differ immensely, with something for everyone. There are plenty of people who happily eat meat nearly every day who would still eat a meal that has no meat! Think of all the pasta dishes (including mac and cheese), pizza options, sandwiches and salads that could be meatless! I understand that the demand is still likely not there for Disney to create a full vegetarian restaurant but acting like a family would rather go hungry than compromise with their vegetarians siblings/parents/friends for a night and allow the vegetarians a night away from the default veggie option is bizarre.
 
As a family with one vegan, one vegetarian and one pescatarian, we struggled a lot eating at WDW. Food became very repetitive and boring and we ended up cancelling our last few dinners as we just didn't want to eat the same thing again. Yes they offered vegetarian dishes and in some places, were willing to work something up for our vegan. But it was 12 days of very little variety on offer. I think you'd all be surprised how many vegetarian's there are out there.

Not really. I'm not that into pasta and I'm not a vegetarian. Nor do I like salads that much, and the only meatless sandwiches I will eat are grilled cheese or peanut butter. And I'm sure not ordering that at any restaurant. I can't think of a time I've gone out to eat and not had some sort of meat. When I do order pasta it has at least chicken in it.

I've also been known to go hungry when I haven't liked food on the menu. Disney Studios, I'm looking at you.

There is, at least, a default veggie option. Not having any meat options at all would be a dealbreaker for a lot of people. My father would say, “what do I look like, a damn rabbit?!” My husband would find something to eat but he wouldn’t be too enthusiastic about it.

Personally, I loved the green tomato sandwich at DL. But the rest of my family would never try it.

If a vegetarian place in another park had Via Napoli’s margarita pizza, then we would be stalking ADR’s there.

Cheese ravioli and good breadsticks, perhaps. Otherwise, I’m not sure if there would be enough plain actual entree options for the rest of my plain-eating family (ie no mushrooms or tofu)
 
A couple of years ago, there was a vegan kiosk at F&W (could have been F&G). I tried it just to say I did. Big regret. Maybe it didn't come back because it didn't do well.

Have you ever gone offsite to Sweet Tomatoes? It’s not vegetarian, but they have many choices! And it’s a fraction of the cost of onsite places.

Sweet Tomatoes closed all their restaurants here after their parent company filed for bankruptcy. People gradually stopped going to them (including us) not enough meat options - just a scattering of meat in their pastas, salads, etc. The rest was way too expensive.
 
Certainly, a lot of us are eating vegetarian. We, dh & I, love our veggies as side dishes, but we also want our main dish to be some type of meat (except very occasionally).
 
If they had a vegetarian only restaurant then some people would be complaining that they only had one place to eat in all of WDW. Who would want to eat at the same restaurant every single meal for days and days. Not to mention the travel that would be involved to get to that one place.

I personally can't stand chicken or Disney burgers - but it doesn't bother me to see that stuff on the vast majority of Disney menus. I quite often order vegetarian dishes just because it looks like something I would like.

I guess eating in Australia has changed a lot in the 15 years since I've been retired. I used to make multiple trips to Sydney and Melbourne for business every year. I was always amazed at how few fat Australians there were considering that the food was so heavy. I remember ordering hummus and pita for lunch hoping to have a lighter lunch - and the pita was deep fried.
 
There may not be an exclusively vegetarian restaurant but every restaurant will accommodate vegetarians, vegans, and other dietary restrictions. I'd far rather have the current accommodations than go eat at this one restaurant with your medical diet or dietary restrictions. If anything the failure to have a separate vegetarian or vegan restaurant signals how mainstream it's become.
