Kids and adults do love it. And it can be made ahead and as you described

Dirt cake is similar and also a hit with kids and adults.

It can be made a day ahead prepared in small individual cups and decorated for fall

Pumpkin pie ice cream pie...

Use a graham cracker crust. Softened Haagan Daz vanilla pint of ice cream mixed with 1/3-1/2 jar Libby's Pumpkin Pie filling (depending how much pumpkin your crew likes) and caramel sauce (depending how sweet you like it b/c you will also top with this) to taste. Fill crust and refreeze. When serving, drizzle with more caramel sauce (zig zag per slice) and top with a dollop of real whipped cream.

These can also probably be done in those mini Keebler graham crusts - just fill to the right level - I can't tell you how many you'd get b/c I haven't done it...

My standard fall baked good and the most requested item I bake. You can cut into small pieces. I recommend making it the night before and letting it chill overnight.

If your goal is the make the kids happy - have you considered rice krispies treats? You can also mix sprinkles or flavored chips into the cereal before you mix the melted marshmallows in, or use a food coloring in the marshmallows. One time we made a dish of them, then as a sort of frosting melted chocolate chips and spread it on top, so there was a thin layer of chocolate.

Getting a bit ahead of myself, but if you are going to need a Christmas recipe for a similar situation, there are a bunch of cereals with red and green options right now. (rice crispies included, but you can make those treats with other types)
