We just had this yesterday!
1 pound ground beef or turkey
1 cup sour cream
1 can cream of chicken soup
1 cup shreaded cheese
1 bag tator tots
Brown meat. Put into a dish (we use like 10 x 10 or so). Mix sour cream and soup. Put on top of meat. Put cheese on next. Pour one bag of tots on top.
bake at 350 degrees for 45 minutes
The person that gave me the recipe lines the tots up perfectly.. I find it tastes just as good to dump (this drives her crazy even thinking about it!

). She also uses two cans of soup, no sour cream, mixing up what kind of soup. You can also use like nacho cheese soup, and add taco seasoning to the meat for a more mexican variety. The options are endless.

edit: I didn't notice you wanted healthy. I would go for low fat soups, no sour cream, perhaps part skim mozzeralla cheese rather than cheddar. 1/2 the amount of tots (lining them up neatly will do this.. cause you to use less). I always use turkey, because it's cheap at Aldi.. that might be healthier than beef, not sure.
