Eat at Home 3!

Monday: Creamy parmesan chicken (Campbell's skillet sauce), brown rice, peas and corn
Tuesday: Ground turkey tacos, chips and salsa and this cheese sauce http://www.budgetbytes.com/2016/02/5-minute-nacho-cheese-sauce/
Wednesday: I have my workout class. Leftovers
Thursday: Pancakes and fruit
Friday: Grilled cheese, left over fruit, oven fries
Saturday: Grilling steak, rolls, scalloped potatoes, salad and chocolate/peanut butter pie
Sunday: Leftovers
 
So, decided against Monday's meal yesterday b/c I had some leftover veg and sausage to get rid of and the Monday meal will keep awhile, so..
Wed - Sausage, Broccoli, Onion, Pepper Cheddar Quiche (I loved this, but I'm sick, so my taste buds are off), Grapes
Thurs - Homemade Chili with Mac and Cheese (for the littlest kids), Mango Slices - Target had a killer deal on 93% ground beef when I was there ($2.79/lb), so they decided dinner for me:)
Fri - Leftover Chili over Tater Tots, Strawberries
Sat - Will decide with whole family tomorrow (Sun is still set:)...

Sat (I have a plan:)) - 7 Fishes Inspired Appetizer Night (7 fishes used in dishes, although some are the same fishes:)) - Mussels 3 Ways (Tomato Broth, Thai Curry, Stout Sauce - just need to warm up each since these are fancy frozen dishes), Shrimp Cocktail, Pork and Shrimp Spring Rolls, Smoked Salmon Cream Cheese Dip and Beer Cheese Dip with Warmed Pretzel Bread and Pretzel Rods (if we run out of bread), Berry Salad (I decided on this menu - a 1st for me - b/c fish was on great sales, but all the other apps/meats were so expensive today:)) - yes, I know these are only 6 separate fish dishes, and I have crab in my fridge, but I don't think I need more, so the crab will be an honorary member of the table! We'll probably eat it Thursday or Friday...

Between my oldest's college tuition and my youngest's class trip to Chicago, I've not got much money to spare for the next couple of months, so I'll be serving cheap dinners (spending a bit more on weekend meals). Thought it would be a good time to join back in this thread.

Tuesday (27) - left over pork loin, mashed potatoes, lima beans
Wednesday (28) - Ham sandwiches, french fries
Thursday (29)-Egg salad sandwiches, tossed salad
Friday(30) - Ramen noodles with added broccoli
Saturday (31) - Ranchero chicken and rice with black beans
Sunday (1) - Angel hair pasta with artichoke hearts, diced tomatoes, garlic infused olive oil, and italian cheeses
Monday (2)- bean burritos with spanish rice
 
Still getting over a stomach virus here that hit hard Friday into Saturday. Needless to say my Christmas Eve plans did not happen and I barely was able to eat Christmas day. So today is the first day I am cooking, even though I am not all that hungry honestly. Also, now I have some sort of respiratory thing caused by being in a house of smokers on Sunday. I just can't win.

Monday: Nothing- wasn't hungry
Today: Macaroni and Cheese, steamed broccoli

Thursday: Sesame Soy Meatballs, rice, steamed broccoli

Thurs - We are home from our 2 day Christmas Busch Gardens trip (my belated birthday gift). Had a great time and perfect weather! Now, I'm cleaning out the fridge to prep for shopping tomorrow. I made a Peking Duck and Rice Soup for a late lunch once we got home (last of Christmas leftovers with some extra veg - this was awesome:) and I'm making Kielbasa, Berry Salad, and Double Blueberry Muffins for dinner (everyone asked for a light meal - this is what happens after gorgeous breakfast buffets:))...But, after 2 days off from cooking and cleaning, it's back to the grind for me:)... I'll post my new menu after shopping tomorrow...
 
Monday: Slow cooker cheesy salsa chicken (chicken, taco seasoning, salsa, 1 can cheese soup cooked on low for 6-8 hours, remove and shred, place back in slow cooker and stir in sour cream. We are going to make them into tacos.
Tuesday: Italian Wonderpot (from Budget Bytes)
Wednesday: I have my workout class-leftovers
Thursday: Gnocchi pasta with alfredo sauce, salad
Friday: Either grilled cheese sandwiches with Alexa waffle fries, or frozen pizza
Saturday: Busch Gardens for the day
Sunday: Chicken stuffed with cheddar cheese, brown rice, broccoli
 


Fri - Frozen Pizzas, Asian Cabbage Slaw, Fresh Fruit Salad (Clementines, Bananas, Strawberries)
Sat (NYE) - Honey BBQ Boneless Wings, Warm Melted Brie with Sliced Apples, Tostitos with Homemade Crab Dip, Homemade Pina Coladas (Pineapple Juice, Coconut Milk, 3 Bananas, Ice, and Honey with Rum added for the adult version)
Sun - Choir Christmas Party (Dinner Catered for whole family for free - yeah:))
Mon - All Beef Meatballs with Fresh Tomato Sauce over Spaghetti, Sliced Strawberries and Bananas
Tues - Honey Mustard Chicken Breast, Mashed Potatoes, Mashed Sweet Potatoes (for adults), Roasted Carrots

Still working on end of week b/c I'll hit Aldis Tuesday for extra fresh veg...
 
Happy New Year everyone!

We spent most of last week visiting older DS in the Destin, FL area. We enjoyed spending time with him (finally saw Rogue One!) and got to try some awesome food (all in the vacation budget). We are looking forward to visiting this summer to do some outdoor activities there with him.

On a not so good note, I started getting a sore throat last Monday at work and ended up feeling pretty cruddy during the visit. It's all allergy related I'm sure, but then the post-nasal drip made me feel super nauseated Friday on the drive home and all day yesterday I was in bed, with DH and DS making sure I was drinking juice and Gatorade and eating a little toast and crackers. I feel better this morning but not up to eating normally yet. Normally I do a huge all day appetizer fest on New Year's Day, but I think DH and DS might just make themselves a smaller version of this.

This week's food plan, along with my work schedule:

Mon(7-5): ham, mashed potatoes, corn, and rolls
Tue (8-5): tuna/chicken pitas with carrots and Ranch dip
Wed (off): fried chicken wraps with fries
Thu (12:30-9:30): pork chops with white beans and peppers
Fri(8-5): cheesy ham and potato soup
 
I kinda dropped out in December-it was a blur of dinners out. Some were with friends and family at their home or ours but many, many were not. We spent Christmas week visiting our daughter in Nashville and just had to sample all of the local specialties before she moves in July ;-)

So, a fresh start for 2017!

Our finances are much improved since I began posting in August and the need for extreme economy is, thankfully, over. I'm very pleased that we made it through several months of a drastically reduced income without touching our savings but I'm also very glad to bid 2016 farewell!

This year I plan mostly to revert to my previous shopping habits although I will keep a few of our thriftier changes in place. I will definitely go back to shopping at our local grocery and using a local butcher-no more frozen bags of tilapia, 15 pound bags of potatoes or weird, mutant gigantosaurus $.88/lb chicken breasts! I've discovered that I'm very much a grocery snob! We're going to give Meatless Monday a try, mostly for health and personal reasons and that should help a bit with the bill.

Dining at DD's future in laws' today but plan on getting back to menu planning on Monday.

Saturday (2-9:30) sausage gravy and biscuits with fruit

Mon - Teriyaki Pork Tenderloin, Mashed Potatoes, Mango/Kiwi/Pineapple salad (love tropical and teriyaki), Fresh Virgin Pina Coladas
Tues - Honey Mustard Chicken Breast, Mashed Sweet Potatoes (for adults), Roasted Carrots, Kiwi/Strawberry Salad
Wed - All Beef Meatballs with Fresh Tomato Sauce over Roasted Vegetable Ravioli (great deal at Aldi), Sliced Strawberries and Bananas
Thurs - Homemade Chicken Chili (Wine, Country Gravy, Wing Sauce base - it's weird and awesome - uses no cream, cheese, or tomato, but looks like it does:), Tostitos with Salsa, Clementines
Fri - Leftover Chili, Blackberries and Grapes, Blueberry Muffins
Sat - Out (Kids requested either Sushi Buffet for Lunch or KFC for dinner - that's the youngest - we're negotiating:)) - other meals will be sandwiches, chips, fruit
 
We need to get back the routine of healthier meals. DH cooks most of the weekdays bc of our schedules but sometimes will get a pizza when there's not a lot of time between getting kids places. I was good for most of the fall about getting homemade pizza ready for Friday nights and making something either in the crockpot or just ahead of time to reheat like taco meat or frittatas, but sometime around Thanksgiving I kind of got off track.

This week is going well so far. Last night I made homemade Mac n cheese and we had salad and fruit.
Tonight is beef stew that's been in the crockpot today. That should get us some leftovers for later in the week when there's a busy evening of activities. And I'll make pizza Friday. DH usually makes chicken once and pasta once. We also have plenty of fresh produce at the ready.

I feel like a major food detox is in order!

I made ham and black eyed soup in the crock pot yesterday that will be ready for tonight. I will chop veggies and set them out with cheese and crackers. I made enough for tomorrow too.

I also have grilled chicken and veggies planned for this week along with tomato basil soup, veggie frittata and fruit salad.

Not a dessert in sight! Hoping this continues through Valentines day, then continue the sugar detox until Easter.
 
ok hello 2017 time to get back on board with this project of eating at home. we ate out all weekend :(

DH is back on day shift this month which means I'm back to cooking.

Tonight-breakfast food (waffles, eggs & ham)
Wednesday-corn dogs & fries (not that healthy but DH has a work meeting late & the toddler loves it so who cares)
Thursday- tacos, cream corn & Mexican rice
Friday- I want an easy night so I'm gonna do Ramen noodles, and garlic bread.
Saturday baked shrimp and veggies
Sunday its a toss up
Monday its a toss up
Tuesday doing a huge pot of chili for leftovers for Wednesday
 
Tonight: Fried eggs over ramen noodles
Wednesday: Hot dogs, mac and cheese, peas
Thursday: Bean burritos and spanish rice (we didn't have it yesterday).
Friday: Baked potatoes and tossed salad
Saturday: Baked Chicken, rice, broccoli
Sunday: Pot roast, onions, potatoes, carrots
Monday: Spaghetti w/ zucchini and artichoke hearts

(We're on an extremely tight budget for the next two months).
 
Hello 2017! Back at eating at home. I have 2 goals this year around food - reduce food waste and staying on budget when it comes to groceries. I can do it if I just stick to my meal plans.

Sunday - Chicken and Rice, Rolls, Applesauce
Monday - Steak, baked potatoes
Tuesday - chicken spinach Parmesan, salad, garlic bread
Wednesday - Beef enchiladas, black beans, corn bread
Thursday - Chicken patties, french fries, corn
Friday - Frozen Pizza, salad
 
I completely forgot about a trade show we're attending on Thursday. They'll feed us as well as pay for the hotel. It's only 15 minutes from our house but the show also provides an open bar so we're taking advantage of the free room :-)

I moved a few meals around to use up the things in the fridge.

Edited to add:
DH had to work late last night so we ended up having Chinese takeout. We were glad to do it because he spent that time finalizing a lease on one of our two rental properties that were heavily damaged in the South Louisiana floods last August. Our retail space (we have a small business) as well as the second rental unit are still stripped down to the studs but we're beginning to see the light at the end of the tunnel :jumping1:
