What’s for Dinner Tonight?

Let's see.. Monday night I made a recipe that DD found in a magazine, Golden Chicken. I didn't enjoy it. It was chicken with a mustard/turmeric cream sauce. Everyone else liked it, so maybe it's just me. Ever since I was sick a few weeks ago, most foods have tasted weird.

Tuesday night... Buttered shrimp is what the resident 8 year old called it, but I called it almost-scampi. I diced up an onion and a red, orange, and yellow pepper, and 10 cloves of garlic and sauteed this in olive oil with Italian seasoning. Then I threw threw in 2 pounds of shrimp (frozen/thawed) with about 4T of butter, some salt and pepper and let it "get happy," as DD would say. I finished it off with the juice of about 1/2 lemon and served it over linguini. Man, was that good!

Tonight was simple: Sirloin steak, NoodleRoni shells with white cheddar cheese (from a box), and frozen petite peas. It went together quickly and made minimal mess in the kitchen. Simple, but tasty.
 
Zero motivation or inspiration today. Feel like it was only moments ago that I put dinner on the table yesterday, and here it's approaching time to do it all over again, just ugh.

If I have to do it I think I'll just pull together some chicken tacos and call it done. Lazy daisy with a bad attitude here.
 
Had the dill chicken and veggies soup tonight and added a little extra seasoning courtesy of a NYT article I read: a stream of lemon and yogurt added after heating up. Really nice and changed up the flavor profile.


Believe it or not, I’ve never had chop suey! What’s in it? 😎
I think people make it differently depending on where they live, but I make it with pasta, hamburger and sauce. Sort of like DIY hamburger helper :)
 
Just after I mentioned that we don't normally eat tomato based soups, we were freezing & tomato basil was the only soup the restaurant at the hotel was serving. We had a cup of that each & shared grilled chicken w/ bourbon glaze sauce, mashed potatoes & grilled mixed vegetables. Wish us luck on the heartburn. :crazy2:
