What’s for Dinner Tonight?

The remainder of a bunch of asparagus in the fridge so I roasted em as well as finished off the Brussel sprouts on the same sheet pan. Really didn’t feel like eating any meat so took some tomato water consommé out the freezer, heated it up and that was dinner.
Too bad the man wasn’t here for the asparagus. We used to “babyfight” over who had more than the other😂.

Didn’t feel like dessert either tonight.
 
Tonight is a planned take-out night. Both DD and I have annual memberships to Maine Public Broadcasting, and as we make automatic monthly donations, we get an "evergreen" discount card. One of the offers is BOGO at the local BBQ place; buy a sandwich (with 2 sides and cornbread) and get one free. Between her card and mine, that's 4 sandwiches and 2 pints of sides. It's a pretty good deal. There is also a BOGO to one of the higher-end restaurants in town, so before the end of February (when the card expires) there are some scallops with risotto with my name on them!
 
Last night I was too wrapped up in the game to cook, so leftovers it was. Go Birds! Tonight I made a new to me recipe, homemade creamy chicken noodle soup. It was tasty and comforting. I ended up with leftovers too, and a quart of clear broth. Plus enough chicken to make a simple chicken salad for lunches tomorrow. Kids have colds, so a good soup was needed. @#1hoosierfan I hope you’re feeling better. It’s going around here too.

I used this recipe, but boiled a whole chicken and made my own broth.
 
We're back from vacation, so it's catch up time. DH & I shared everything.

Thursday: Cheesesteak Eggrolls (I was hesitant to order these, but they were amazingly good.), pork belly appetizer & scallop entree.
Friday: Burrata pizza, then late night fried pickles at a piano bar.
Saturday: Lobster Tom Yum, pea shoot & scallion dumplings & roasted Moulard duck
Sunday: Shrimp Alfredo w/a breadstick

Unfortunately, I apparently had too much fun on our mini-vacation & am now out for the count for a few days. The restaurant that we planned to pick up dinner at last night was closed. By the time we realized that, I was done for the day & just wanted to get home. DH decided to run into the grocery store to pick up something he could quickly make for us. So, last night, we had the most totally disgusting frozen lasagna I've ever tried to eat. :crazy2: Wish us luck for dinner tonight. We'll probably need it. :lmao:
