What’s for Dinner Tonight?

I made a giant batch of spag sauce this weekend so we have been living off of that. Used the rest of it today - layered, in crockpot, some sauce, then a layer of just-softened red peppers and onions, then I mixed an entire box of just-boiled penne, some of the pasta water, the rest of the spag sauce/meatballs, half a container of cottage cheese and a whole block of cream cheese, cubed, and threw those on top. Topped with parm and provolone and cooked through. Having a small bowl right now and it is perfect!
 
Busy day mostly filled with stuff I dinna want to do peopled by bureaucrats who were no more interested in me than I was with them. Such can be life.

Read an article a few days ago and decided to make a new to me recipe attached to it: Roasted Brussel sprouts and tofu with spicy lime dressing. Hubba hubba! Well, that was that worth my time and I didn’t even have to add meat to feel sated; adding to my “baby it’s cold outside” roster. Had an Asian feel so I heated up a cup of wonton soup to go with it. Have some fresh pineapple chunks and clementines on reserve for dessert if only I stop picking at the dinner leftovers, lol.
 
Your chicken sounds great. I'm sure it was much better than ours will be. Unfortunately, I wasn't up to wrestling a whole chicken today.
I LIVE for rotisserie chicken from Sam's! On really busy/late nights I get someone who is driving home from Bangor to grab a chicken at Sam's. I will throw together some stove top, some instant mashed potatoes, and open a can of peas. Dinner. Done. If I'm feeling extra fancy, I'll open a can of cranberry sauce (yes, with the lines!)

TOnight I made leek/potato soup with mushrooms and a bit of bacon. Leftover roast chicken on the side for anyone who wanted to add it to the soup. I also rolled some cheddar cheese into the Pillsbury crescent rolls, for something different. I'd never made potato leek soup before, and it came out pretty good!

I totally forgot to leave something out to thaw, so we had some frozen, premade broccoli and cheese stuffed chicken breasts that we keep on hand for busy days. Also had some rice-a-roni and green beans. I did have some of the leftover chicken noodle soup from last night for lunch.

I do.
I use Real Good Chicken. Cook it in the oven and then make the sauce.
1/2 cup water, 2 T cornstarch, 3T brown sugar, 3 T soy sauce, 2 T ketchup, 3 T Housin sauce, 1/2 tsp ground ginger 1/4 tsp red pepper flakes. Mix. over cut up chicken and heat in micro.

I would use more pepper flakes next time
 
Chardonnay apple sausages from Trader Joe's, sauteed cabbage/onion, some form of starch (maybe spaetzle, maybe buttered noodles) and some peas for the resident 8 year old, who will eat the required 2 bites of cabbage and then move to some other veggie. Oh yes, and applesauce.
 
2 pm and I still have no plan for tonight. Maybe I can pull together some lentil tacos. Or I could make up some seasoned rice, steam a veg and dip into the stash of salmon croquettes I made and froze in last weekend's batch cooking extravaganza. They are supposed to be for rushed nights or emergencies, but I think I may be engineering the need out of sheer laziness because I know I can.
