Show me your fresh pork recipes, please?

As I commented in another thread, we are eating a lot more pork these days, as it's the most affordable meat right now. Unfortunately, DD is not very fond of fresh pork (she's fine with ham and/or sausage.) So, I need to find some recipes that might appeal more. I'm mostly looking for options that will change the texture of it a bit, as that's her primary objection to fresh pork; she says it's too chewy. (Pulled pork is great, IMO, but in this case probably not a solution, as she also dislikes most BBQ. Yes, I know, she's an unnatural child, LOL!)

Anyone got something great I can try? TIA!
 

I have some Greek heritage, so I love Greek pork recipes. Simple and delicious. 😋

Another idea is a pork roast cooked or baked after being covered in Goya Sofrito sauce then served on top of rice and beans, I like black beans which are good just over rice IMO. Can probably marinate pork in it and just toss it on a grill too, Goya has a lot for pork since it is a mainstay in a lot of spanish cooking.

Pork slow cooked in sauerkraut? That definitely gets a different texture than your average pork roast. I don't even like sauerkraut, but I love pork cooked in it (I just don't eat the kraut).
 
use it like beef, slice thin for stir fry, ground or chili, 1/2 beef and 1/2 pork meatloaf. tenderloin - marinate and grill. I usually cut tenderloin into medallion and grill to avoid overcooking.
 
This recipe is for a pork loin roast, for the slow cooker: Trim most of the fat off the roast and then place in a slow cooker. Put in 3-4 cans of drained and rinsed cannellini beans. Mix in a bowl 16oz of chunky salsa either mild or hot and a can of beer (the alcohol cooks away), and pour it into the cooker with the roast and the beans. Cook on low for 8-10 hours.

My family loves this dish. I serve it with rice. You take out the beans after cooking and serve them separately.
 
I am not much for recipes, but my friend makes pork tenderloin with his Sous Vide cooker and it comes out super soft and tender! If you don't have one, you might want to look into them.

How is she with ground pork?

ground pork can be substituted for ground beef in most recipes-it just comes down to the seasoning in my experience. if you don't have a meat grinder (kitchen aide mixer attachment is SO worth the price) most butchers at even the major chain stores will grind up pork at no cost. some will offer to sell you the existing packages of plain/unseasoned ground at whatever the best sales price of pork is currently going for but TURN IT DOWN b/c you will end up with a higher fat content. i get whatever the cheapest cut is and we grind it our selves (do the same when cuts of beef are on sale-ground beef is obscenely expensive these days).
 
We do it simple here. Hubby takes a pork loin and rubs it with Lawrys and some salt and pepper and puts that puppy on the grill. Or, thick pork chops on the grill, or hubby fries thin ones for himself (I don't eat fried food) I take pork loin and just throw salt and pepper on it and put it on the inside grill. Or hubby throws a butt on the grill or in the slow cooker for pulled pork. If he's in the mood and has all day, he will fire up the smoker and smoke a couple of butts. If smoked you don't need any sauce on it. Of course, if he fires up the smoker its enough pork to feed my son and the neighborhood. Two butts, a couple of racks of ribs, a couple of packs of hot sausage for him and a pack of mild sausage for me. We freeze a lot of pulled pork.

it freezes SO WELL! we leave it unsauced and do it up in air seal bags. i can pull it out to sauce for sandwiches or to make enchiladas with. easy squeezy.
 
If you make Chinese food with the pork, velveting it can change the texture a lot. The folks at Woks of Life say they don't use baking soda usually, but that is what would most soften the pork. I use baking soda because we cook a lot of cheap pork shoulder.

My favorite chinese dish with pork is yu-shiang pork.

My absolute favorite pork dish is this Korean stir fry. It can be fried on the stove, or grilled outside. It's the dish my adult kids request most often when they come home to visit. I use thinly sliced pork, but not pork belly like Maangchi does, because I like it less fatty. Also good with thin strips of boneless, skinless chicken thighs:

Your pork should not be chewy. It's either low quality pork or you are overcooking it. Cooked pork CAN BE LIGHT PINK in the middle like steak. Don't overcook it.

I typically make pork tenderloin on the grill. I like to actually cube it and skewer, marinate in teriyaki and grill. These cook fast, 4-5 minutes. Serve with either white or fried rice and broccoli or snap peas. Sometimes I will grill some bell pepper and onion skewers to go along with it. Brush some watered down hoisin sauce on them after they are cooked. Delicious.

I also like to grill whole tenderloins that have been rubbed with garlic salt, pepper and some olive oil and a tiny bit of apple cider vinegar. Let it sit wrapped in foil for a couple hours and then grill, brush with BBQ sauce towards the end, then slice into medallions. Use a probe thermometer and cook to 145. I serve that with macaroni and cheese, most often.
 
One of my kids favorite ways to eat pork (chops) is when I simply season them, coat them in a little butter, then dredge them in Cheez-Its that I've pulverized into a bread crumb, then bake them in the oven. :)
 
I make the easiest pulled pork ever and it always comes out super tender and delicious. You can eat it as is or add BBQ sauce to it. I take a pork butt (pork shoulder roast) and plop it in the crockpot and then pour a bottle of root beer over it and cook low and slow for 8 hours. Discard the root beer and shred the meat. It’s good as is. I freeze it and I swear it tastes even better reheated.
 
For whatever recipe you choose, you might consider using Costco's pork loin boneless chops. Very high quality.
