San Angel Inn construction?

No news yet. The could try to stay open with construction walls, unless they decide to retheme it as well, but Disney hasn't said.

With the upcoming closure of the Grand Fiesta Tour, is there any word about the restaurant being affected? Noise, or water view?
The dining room at San Angel Inn was refurbished in May. They added booths and have separated the tables a bit with dividers. They did a great job and the dining room is much nicer now. I don't see any reason why they would have to close the restaurant while they worked on the ride. We have reservations for lunch on Feb 5th, so the restaurant seems to be open. :)

I hadn't thought of that. The ambience is a big part of dining there. Hopefully they can do whatever work needs to be done without affecting the restaurant experience and view. Just booked a lunch for later in January ... fingers crossed.

The last time the ride went through refurb (to become Gran Fiesta), the water was drained from the ride, and the entrance 'hole' that goes back into the ride was boarded up...but the interior lighting, volcano and backdrop all stayed the same and didn't affect the restaurant at all. If you sat right on the water, you'd notice it was missing, but otherwise, the ambiance was not really impacted.
