Quick And Easy Camper Meals?

Does anyone have any quick meals they would like to share?

We just had Jimmy Dean's Breakfast Skillets with Ham and it was very good!

Excellent meal to take to Disney!

We make chicken quesadillas on our griddle. I use the precooked chicken strips, cheese, onions, jalapenos. Those are very quick and pretty good. I heat up a cheese dip in the microwave and have chips, dip, salsa, and the quesadillas. For dessert, we make a sweet quesadilla with peanut butter, marshmallows, and chocolate chips.

Of course, all the old standbys of spaghetti, tacos, and sloppy joes work. I will brown all the meat ahead of time, freeze it and then use when needed. I like to use the crockpot when I can because it saves time.
 
I bake a bunch of potatos before we go, so I can easily fry them up for breakfast, or cut them for american fries to go with hamburgers on the grill.

I also make up a batch of chili, then just warm it in the crockpot one of the mornings we're at MK. Then, we come back to camp for lunch. We also use the leftover chili for chili dogs later on.

Coke Roast in the crockpot is quick and easy too. Just put a beef roast in the crockpot, and pour a Coke (or diet coke) over it and turn it on low for the whole day. I also add chopped onions. It's great to come back from a long day at the parks and have dinner waiting!
 
One of my growing up memories was camper pot roast...mmmm... Mom would put it in the oven,potatos,everything together,cover tightly with foil, and leave from a.m. onward on low heat, it would simmer all day, and-What a dinner! Plus I'm subscribing to this for good camping meals in general,I have no camper.....
 
If we don't have taco salad (beef, taco seasoning, cheese and crushed tortilla chips) on every camping trip the kids revolt. For some reason they absolutely love it. We usually have it on the first night of every camping trip.
 
We always cook a meat sauce, a gumbo, redbeans and rice (with smoked sausage and pickled pork,) a crawfish etouffee, and a shrimp creole.

We have the Food Saver, so we can vacuum pack the meals real flat, and bring those along in the RV freezer, and we have good home cooking with us.

We start cooking the week before and it's become kind of a "count down" to our trips!

I also prefer not to cook in the RV, so I have the whole coleman stove set up and will cook breakfast (grits, eggs, bacon, defibulator...) outside in the mornings under a screen tent. I'm an earlybird, so I usually don't mind waking up early and getting breakfast on.
 
We just got back from Fort Wilderness. We used the crock pot a couple of times.

The first was a roast. Cut up a onion, put at the bottom of pot, put roast on top. Mix beef broth, au jus package and water and put over roast. Cook on low for 8 hours. Serve on french bread and use the drippings to dip in.

We also did ribs. Cut into 2's, salt and pepper, and brush with sauce. Layer and cook. Two great meals that you don't have to do much to.
 
Hey Rhonda, this question comes up quite a bit. We love to see others cooking ideas. Maybe you could make a recipe/cooking sticky thread so it would be easy to find. Also, that way we could add new recipes as we find ones that work well. Just a thought.

When we camp, we usually grill and take our time with meals but I don't want to waste the time cooking and cant afford to eat in the parks.

I figure out how many meals I need then make a big grocery list on the back. It saves us going to the grocery store while we are there also.

The last time we went, I took an insulated back pack full of lunch. I packed wrap sandwiches so they wouldn't get smashed, Pringle potato chips and bottles of coke. They checked the bag when we went in and didn't have a problem with it. It saved time coming back to the camper.

We're going to be at Fort Wilderness next week, and I was doing my pre-camping cooking last night. On our menu are taco salad (I cooked and froze the seasoned meat last night), spaghetti (made the meatballs and meat sauce and froze that too), hot dogs and baked beans, chicken casserole (premade and frozen) and crock pot chili. I like to make a good portion of a meal in advance, freeze it and just microwave it or let it sit all day in the crock pot. Things like lettuce, tomatoes, milk, sour cream and other perishables I'll pick up at Publix down there. I have a 5 day cooler for frozen stuff but we don't run the refrigerator on the 22 hour drive down and I don't want to freeze those things by putting them in the cooler with the frozen foods. We'll be there for 8 nights, but I've only planned camper meals for 5 nights because I know we'll be in the parks a couple evenings and we've got to go to Trail's End at least once!
 
Crock pot lasagna - brown your meat first then layer in the crockpot as if you were going to cook it in the oven. Put it on low for a couple of hours - yum.

Another thing I do is buy the frozen skinless, boneless chicken breast; put 'em in a ziploc bag to thaw and put my marinade in the bag while they thaw - they marinate and thaw at the same time. We come in after a day at the park and they're ready to throw on the grill. Works with boneless porkchops too.

65 days 'til we're back at the fort and Star Wars weekend!! :woohoo:

I'm so happy they came out with those disposalable crock pot liners. We always put in boneless chicken thighs with like a petes wing sauce and put on low all day and come back to great wings with a salad. My only gripe was the cleaning up with the crockpot ,but now thats taken care of with the bags.................Karen pirate:

Great idea! It's done! I started the "Official Camping Recipe Thread" and stuck it to the top!

Cook up sausage patties or links which every the family prefers and pancakes or waffles etc or just buy the frozen ones from store. For breakfast pop the sausage in microwave for 2 mins and heat the waffles in toaster or microwave if that is easier.

Sausage gravy easy to make up ahead heat in micro or crockpot on low over night make up biscuits or buy the ready made ones that only needs to be heated another very yummy breakfast. OR the gravy and toast works well too.

Bagels and sausage works too or bagels and whatever you enjoy on your bagels I know some northerners much more familuar with bagels than biscuits.

Very quick easy breakfast to get everyone started. Even faster than gettin out cereal and milk and everything for cold breakfast.

Don't forget snacks and treats. Homemade cookies are a big hit, rice krispie treats travel well. If you have a freezer the popsicles that comes in the plastic bag are nice just pop a few in freezer and you have a nice refreshing treat. Pop them in as needed no need to put the whole box in freezer at once.

Fresh fruit most of which doesn't have to be kept cold but is usually tastier if cold so only need to keep a few pieces in fridge or cooler.

Peanut butter and crackers or peanut butter sandwich for those that decides they don't care for the main menu that meal. Makes a great snack too.
