Need chili recipie for 10-15 people

Any good, and relatively inexpensive, chili recipies out there? My dd's birthday party is next week, and I would like to feed extende family and friends afterward. We're having veg. soup, and chicken noodle soup for the kids.

A good chicken noodle recipie would be good, too!!! Thanks!
 
The one in this week's publix ad is good! It is on page 12. You can add too; it make a larger amount. As the recipes stands, I made this and added a huge can of diced tomatoes to it. It fed 5 one nite and had some for leftovers the next night for 4. I also goofed and used 2 cans of diced tomatoes with chilis. It was a tad spicy. So I would add 2 tablespoons of chili powder... taste then add the third.

I cannot open pp's recipe, so I hope these are not the same.

I like this, but it is not a exactly a chili,

Santa Fe Soup
1 can black beans
1 can kidney beans or pinto beans
1 can chili beans
2 small can shoepeg corn ( or white corn)
2 packages dry ranch dressing mix (to taste- may not use all of 2nd pack)
2 packages of taco seasoning (to taste- may not use all of 2nd pack)
2 cans stewed tomatoes ( I do one diced and one crushed)
onion to taste or dehydrated onion flakes
1lb. ground beef, cooked and drained (or more, if you like)
1 bag cheddar cheese
sour cream
corn chips or tortilla chips


Dump all ingrediants into a large pot. (except the cheese, sour cream and chips). Bring to a boil. Cover and set stove on low. Cook for an hour. Garnish with cheese, sour cream, and chips.

This makes a ton! Easy!!

I prefer Scoops chips.

This is a popular soup. I like it in place of chili, sometimes. Pretty cheap, if you use store brand stuff.

A friend from the Dis gave me the recipe::

len's Chili:

2 lbs Ground Beef or Turkey

1 large onion chopped

2- 10 oz cans diced Rotel Tomatoes & Chili's Original (drained)

2- 28 oz cans Hunts diced tomatoes

1- 16oz can black or dark red kidney beans (drained)

1- 16oz can hot chili beans

2- 1loz cans shoepeg corn (drained)

2 pks dry Ranch dressing (original)

2 pks taco seasoning (mild or hot to taste)

1- 14.5 oz can tomato sauce

1- small can tomato paste

Add another can of tomato sauce for more liquid

if desired

Chili powder to taste



I Brown my meat and onion at the same time.

I also make mine late at night, put it in a crock pot

and let it cook all night. In the AM, I unplug and store

the crock pot in the insulated carrier and let it sit all

day. It remains warm all day. Then re-heat and serve.

Have you tried TVP to extend the meat? I have been using it extensively this summer. I buy ir in my local natural foods co-op. I usually rehydrate it with heated beef broth and then mix it in with the hamburger meat when it is about half through browning. You can do as much as 50/50 with the hamburger and it's not noticeable. It works especially well in a dish like spaghetti or chili. I have served it to company a dozen times this summer and no one has noticed. I think 1# of TVP (Textured Vegetable Protein, basicly a soy meat substitute) makes up to 4# once rehydrated, so at $1.50 a pound, I figure it costs me around .40 a pound hydrated and cuts my costs in half for hamburger when I use it 50/50. Haven't tried any patties on the grill like this, but anything that calls for browned hamburger it works great, I cook up a bunch with sauted onions and freeze in quart size bags to thrown into tacos or chili at the last minute.
 
if you want super simple, very basic to feed that many people:

2 lbs ground beef (brown it)
add 4 medium size cans Campbells pork n beans
add 2 cans Campbells tomato soup

turn on low heat let simmer for about 4 hours.
may need to add a bit of water--just a little--it can be very thick. but wait till after it simmers for a few hours
if it seems like there is not enough add another can of beans.

serve with some shredded mozzarella on top and fresh loaf of italian bread with butter.
it is very filling, very cheap and easy.
my mom used it like this because there were 6 kids and we all liked different spices, this way it was cooked very bland and we could add our own salt and pepper as we liked.
 
My tried and true (won several "Most Like Mom's" recognitions at our church's Chili Cook-offs) is from Mable Hoffman's Crockery Cookery book. It's supposed to make 6-7 servings, but I usually triple for my 6 qt. crock pot. It's a good, basic chili, a lot like Wendy's. I usually add chopped green peppers, too.

Short Cut Chili Con Carne

1 lb. lean ground beef
1 small onion, chopped
1 tsp. salt
1 to 2 tsp. chili powder (usually I use a T. or more)
1 bay leaf
1 tsp. Worcestershire sauce (I'll go up to 2 tsp - 1 T.)
2 8-oz. cans tomato sauce
2 16-oz. cans kidney beans, drained

In skillet or slow-cooking pot with browning unit, break up beef with fork and cook until lightly browned. Pour off excess fat. In slow-cooking pot, combine meat with rest of the ingredients. Cover and cook on high for 2-3 hours. Remove bay leaf. Makes 6-7 servings.

If double/tripling, I'll cook on low for 6-9 hours or so with good results.

Mine also has rotel. You can stretch it by using more beans.
1# hamburger or turkey browned with 1 diced onion.
add 2 cans of kuners chili beans
1 can of kuners hot chili beans (14 or 15 oz) cans
2 cans of rotel

For Frito pie, I just have fritos, chopped olives, jalapenos, onions and cheese in bowls to add. Also sour cream

This is our usual Halloween party staple
 
I buy the packet mix that says Chili on it and all you have to add is the hamburger meat, a can of pinto beans, a can of kidney beans and canned tomoatos or tomato sauce. It's very simple and it tastes really good. You can buy the mild or hot kind. I serve it with homemade bread.
 
What you will need..

Ground beef
frozen diced onions
frozen diced green peppers
chili seasoning packet(s)
canned kidney beans
canned diced tomatoes

You can make as much or as little as needed.
in pan, brown meat, drain
add onions & peppers to pan, cook with or without meat.
In a pot( or the same pan, if big enough) add tomatoes, seasoning and beans. cook on low - med heat. add meat, peppers & onions. cook til heated through. Enjoy. You can also simmer longer if you have time. I make this and have it on the table in half an hour.

Canned diced tomatoes - petite diced cook down, so if you do not like chunks of tomatoes use petite.
 
I like to use stew meat, and will usually cut each chunk in half, then let it cook in the crockpot with dried onion, a pack or two of chili seasoning, Rotel tomatoes (and liquid).

I'll add liquid if I need too. When the meat is tender, and if it is too runny, I'll thicken with whole wheat flour. Usually that isn't needed. Then I'll add several cans of beans....usually dark kidney and chili. Sometimes I'll throw in a can of niblets corn.
 
You can stretch chili (and make it even tastier IMO) by serving it over a scoop of white rice. That's what I do when cooking chili for a crowd and everyone seems to love it.
 
I use the Chili Starter cans that you get in the grocery store. They have Texas or Traditional, and we normally use Traditional.

Brown up some ground beef, saute some onion, add in a can of diced tomatoes and there you have it.

I will normally add in some extra stuff like ketchup, some chili sauce, chili powder and sometimes fresh diced jalapenos.

It's very basic but SO good & extremely easy to throw together.
