Ok, all you wonderful cooks out there, I need a lemon bar recipe to knock some friend's socks off. To be a bit specific, I need one that has more of a crusty top. A friend gave me a recipe that has a very pudding/jello like top and I am not fond of it. If you have a great one, I'd love to hear it! Thanks :cool1:
 
Lemon Cream Cheese Bars


Ingredients :
1 box yellow cake mix
8 ounce package cream cheese, softened
2 eggs
1/4 cup sugar
1 tbs. fresh or bottled lemon juice
1/3 cup oil

Instructions :
Preheat oven to 350 degrees. Use 9x13 ungreased pan. Mix dry cake mix, 1 of the eggs, and 1/3 cup of oil until crumbly. Reserve one cup of this mixture. Pat the remaining mixture lightly in pan. Bake 15 min.. While this is baking beat cream cheese, sugar, lemon juice and the remaining egg until light and smooth. Spread over baked crumb mixture. Sprinkle reserved crumb mixture on top and bake 15 minutes longer. DO NOT OVERBAKE. Will be light golden brown. Chill thoroughly and cut as desired.
 
Oh, now that looks good. Anything with cream cheese in the title is great for me. :teeth:
 
I've tried this one and it's pretty good --

1 c. flour
1/4 c. confectioners' sugar
1/2 butter or margarine, cut in pieces
3/4 c. sugar
1/2 tsp. baking powder
pinch salt
2 eggs, lightly beaten
1-1/2 Tbs. lemon juice
1 Tbs. grated lemon peel
Confectioners' sugar for garnish

Preheat oven to 350F. Line a 9" square pan with foil to extend 2" over 2 sides. In bowl, combine flour and confectioners' sugar; cut in butter until mixture resembles coarse crumbs. Press mixture into pan. Bake until barely browned, about 20 minutes. Meanwhile, in medium bowl, beat together granulated sugar, baking powder, salt, eggs, lemon juice and peel. Pour over crust and bake an additional 20 minutes until set. Remove pan to wire rack to cool completely, about 2 hours. Lift from pan by the foil; place on cutting board. Cut into squares. Sprinkle lightly with Confectioners' sugar. :thumbsup2
 
DELICATE LEMON SQUARES

In a large bowl blend 1 cup Flour with 1 stick (1/2 cup) softened Butter and cut into bits. Add 1/4 cup Confectioners Sugar & blend until the mixture resembles meal. Pat the mixture into an 8 inch square baking pan. Bake in a preheated 350 degree oven for 12 to 15 minutes, or until it is pale golden.
In another bowl, beat 2 Eggs until they are light & lemon colored. Beat in 3/4 cup Sugar & 3 tablespoons fresh Lemon Juice & beat the mixture for 8 minutes. Yes, 8 minutes! Sift in 2 tablespoons Flour & 1/2 teaspoon Baking Powder & stir the mixture until it is combined. Pour the mixture over the baked layer & bake in the 350 degree oven for 20 minutes or until it is golden. Sift Confectioners Sugar over the top. Let cool & cut into 2 inch squares. Makes 16.

I got this recipe from my Aunt & they are great! My kids just love them & sometimes I end up making 2 pans!
