Help with some menu options (Gluten-free / healthy)

We are going to be at WDW in 2 weeks and DW has some food restrictions she did not have on our last visits. Wondering if anyone would mind giving some suggestions for her.

She is trying very hard to stay on a diet that is Gluten-Free and has less Processed Carbs (Healthier options).

We have the following dining reservations:

Boma (Dinner)
San Angel (Lunch)
Jungle Skipper Canteen (Dinner)
Yak and Yeti (Lunch)
Sanaa (Dinner)
Le Cellier (Dinner)

Any food suggestions for these places would be welcome.

Oh come on. Surely someone here is on a gluten free diet and has eaten at one of these places!
 
Have her look at the allergy portion of the above menus. Most should be available online. I have eaten at Sanaa and Boma. I like the butter chicken at Sanaa and the GF bread service. Boma-the chef will either walk you around the buffet or hand you an allergy menu that is very hard to see in the dim light while navigating a buffet. Sometimes they will offer to bring you something from the back if you have a true allergy or Celiac disease and have cross contamination concerns vs. doing it for a special diet.
I’ve found that the options post pandemic at most restaurants are not as plentiful as before.
 
I agree--look at the official Disney menus for ideas of what may be available. Be aware that these are not necessarily identical to the actual menus but representative of what's offered.

Scroll waaay down on each restaurant's menu. The Allergy Friendly sections are at the very bottom.

And yes, both the variety of g-f menu items and chefs able to make something not on the menu may be very limited.

Gluten-free will be easier than my combo of gluten and dairy was in November. Many restaurants now have menu items pre-prepared, I was told, and can't alter dishes. They also haven't basic ingredients to make something from scratch. Only a few Signature chefs offered to make me something special whereas that used to be common if nothing on the menu appealed. I ate more steak with salad than I wanted.

You may not get a lot of responses because of your phrasing. Many people need to eat gluten free out of necessity vs. “trying to stay on a gluten free diet”.

Quite so.

Most gluten-free menu items are loaded with rich dairy-based sauces.

Breads and pastries are typically very starchy because corn starch and potato starch are so often used for bulk and texture.

Your wife may be eating salad and little else if healthy, less-processed foods are a significant concern. There were many fewer places in November where I could get a side of stir-fried vegetables than formerly.

I've no suggestions for your listed restaurants as the only one where I've eaten was Le Cellier over 10 years ago.

I'd join some gluten free Disney groups on FB, they have a wealth of knowledge on this topic. My daughter has celiac disease and eating at Disney is amazing for her!
 
We eat GF and love all the ones on your list!
It’s not healthy but Ragland road has a great GF batter they used for fish and chips, onion rings and my favorite scallop forest. Liberty tree tavern is our favorite GF option at magic kingdom. Steakhouse 71 is great for lunch, we prefer the lunch menu to the dinner one and it’s cheaper. The ceasar Salad is amazing there. I know you said healthy but the Churros at nomad lounge at AK are incredible and worth a splurge, I typically get the chicken Manchurian bowl and an order of churros there. Port orleans resort has GF beignets. At Hollywood studios we like 50s prime time they will make GF fried chicken and brown derby for their Cobb salad. Grand Floridian cafe also has a great GF menu and has healthy options my husband loves their miso salmon. Unfortunately most Disney restaurants have green beans as the veggie so it does get tiresome having that with every meal. We have eaten at almost every WDW restaurant so if you have anymore questions I’m happy to help.
 
Definitely look at the allergy menu and let the host know when you check in. While we always mentioned my mother’s red wine allergy, our most recent trip in September was the most attentive we had and we honestly have no clue why. I’m talking managers to hosts to chefs to even the manager of the Japan pavilion when we dined at Teppan Edo. I hope it’s because the pandemic really opened some people’s eyes and changed things even more in terms of allergies, but we will never know.
If I recall correctly, Yak and Yeti is very thorough in their menu with allergies. Le Cellier the servers are very knowledgeable and someone did come out to speak to us and another table.

Ugh. I hate FB and most social media, but it looks like this is what i will have to do too, since i am heading to WDW for the first time since knowing I am celiac. Thanks for the advice. It is encouraging to hear that your daughter had a good experience.

I had the Hardy Har Char Siu Pork and the Panna Cotta at Skipper's and it was to die for!!!

I don't know how 'healthy' it is though. 'Healthy' kinda goes out the window when I'm at WDW. If it's GF, especially if it's batter-fried, I'm IN!
 
I have several allergies and intolerances - gluten, added nitrates/nitrites in mean, processed/refined sugar, bell peppers and walnuts. I filled out the special diets form ahead of time, then spoke with the server and/or chef at each restaurant. We had a great experience (and you can see by my allergies that I end up eating healthier than many simply because I don't have much choice!)
 
I've eaten GF at all the restaurants above and then some...but WDW is one of those places where I don't worry about carbs. At home I don't eat bread, rice, etc. but on vacation, bring it on! At Sanaa, for example, we get the GF bread service, and at Skipper Canteen I love the fried chicken, but that's because they're vacation treats. Sorry to say many of us GF folks probably can't be of much help because we love WDW precisely because we can let our hair down and live a little!
