For the OP: you should be able to get GF food at most places in DTD. If you make a reservation, note that you have a gluten allergy. Repeat this at check in and repeat with your server. I know that Sprinkles has a "delicious!" (according to a friend who is GF) cupcake. I've heard that the GF menu at the Jazz Kitchen has some very tasty items.
I've eaten at Rainforest and Jazz Kitchen and both places have wonderful GF selections (although I know that Rainforest is closing soon). I know that Tortilla Joe's & Splitsville have GF selections, but don't know that they are The cupcake at Sprinkles is delicious. It's red velvet. I wish they had a wider selection, but hey, I'm not really complaining.

Oh my so sorry to send you on a search, I thought you were going to Disney World.
You shouldn't have any problem at all finding gluten free foods in Disneyland. I went last year with my two grandchildren who are both allergic to gluten. We did all tableservice meals & the chef came out each time & made them a great gluten free meal. They are also allergic to eggs, milk, nuts & the list goes on. The chefs didn't seem a bit overwhelmed & some got very creative!
I don't know about counter service meals, but I'm sure they would have gluten free options too!
