Does Anyone Make Homemade Ice Cream?

Since you mention butter, can I ask what the date was on your whipping cream? I remember my mom made butter (and buttermilk) once by accident, trying to very stiffly whip some cream in her stand mixer. Turns out the cream was too--and I think this is right--fresh.

Yep. Whipping cream needs a few days to set up and "age" or it won't whip properly. Go figure.:goodvibes Usually, what you buy in the store has been in the case a day or three, though, so it's usually safe-ish. Also, if you overwhip heavy cream, you will get the start of the separation between butter and buttermilk. I've done that once or twice when I wasn't paying attention to the mixer!
