Candied Nuts

Anyone have a good recipe for candied nuts, I love the ones they have at fairs around here and would love to make some for Christmas. I looked on the internet and can only find spiced ones, I'm not into spices that much looking for one maybe with vanilla and other ingrediants. Not sure how to make them after that, in the oven or stovetop. Have no clue if anyone could help I would appreciate it. Thank you.:)
 
I have a recipe for candied almonds that I used last year to make Christmas gifts. They taste exactly like the nuts you get at Epcot(or fairs, amusment parks). It does call for cinnamon.

1/2 cup water
1 1/2 cups sugar
1 tsp cinnamon(or to taste)
1 lb almonds, with skins

1. Bring water, sugar and cinnamon to a boil. Stirring constantly.

2. Add almonds and toss to coat.

3. Remove almonds with slotted spoon.

4. Arrange on greased baking pan.

5. Bake at 350 degrees for 20 minutes. Basting twice with reserved syrup.

6. Cool.

7. Store in an airtight container.

i use pecans with an egg white, lots of sugar, a sprinkle of cinnamon and a splash of water. mix well and spread onto a baking sheet to a single layer. bake at 275 for about 5 minutes, take out and flip, bake again for 5 then flip, and keep doing that until they are dry and looking done.. is that exact enough?? lol, i'm bad at exacting recipes.

The ingredients are the real Bavarian recipe; however we do not do the baking part - just heating until the sugar solution becomes grainy (after the clear glaze stage) It takes some practice but if you take them off too early they are shiny, too late too grainy. If too late, let them melt back to shiny stage and try again.

Best to use a wooden spoon by the way.

There are many recipes posted here with eggwhite and baking but those are not the original form.
