Cake mix cake without eggs??

Can I do it?
I have made cake from scratch without eggs, but have never tried with a mix.

has anyone every used a good sub for the eggs in a cake mix?
 
I've tried it before and it didn't come out well. I even used egg replacer and the cake just didn't hold up well.

About the only thing you can sub in a cake mix is the oil because you can replace it with another type of moisture/fat. The egg is very hard to deal without.
 
My toddler has an egg allergy and I'm so happy my friend (who also deals with allergies in her family) gave me a box of dried egg substitue. Follow the directions (stir some powder with some water) and add it into anything you're baking. Works great.

Boxed mixes usually have a place where they list the amount of applesauce to be used as a substitute too.

uggg, I have to bring a cake to a party we are going to and I just discovered I am out of eggs, and I have no time to run to the store before we have to leave.

I am going to try my standby, ground flax/water ( makes a gel consistency), I am afraid it will affect the taste.

maybe I will just stop off and buy something to bring to the party.
 
My nephew is allergic to wheat and eggs, and my sister has never found a product to use with gluten free cake mixes that works.
 
Does the cake mix already have eggs in it? Cause I never add eggs to box mix...I just add a can of soda. In fact that is all I add..no water, no oil and no eggs :) Just soda.

It's not a gluten free cake mix, its just regular

I just put the cake in the oven using 1Tbsp cornstarch + 3 Tbsp water to sub for each egg.
we will see.

I have a great recipe for a vegan chocolate cake, that is moist and delicious, but I wasn't sure how to translate that to the mix.
and I didn't have enough flour on hand to just do it from scratch.

gee ya think I need to get to the grocery store!!!!!??

My co-worker says this recipe is amazing! I thought it looked rather odd after reading the ingredients but she swears that it works and is delicious! Oh and it contains no eggs ;)

Dump Cake recipe
1 can crushed pineapple
1 can cherry pie filling
1 yellow cake mix
1 cup melted margarine
1/2 cup chopped nuts

in a 9x13 pan dump in pineapple and spread, juice as well spoon on pie filling cover with dry cake mix pour melted marg over all sprinkle with chopped nuts. Bake at 350 for 45 minutes serve with cool whip topping if desired
 
You could go to any vegan website and they would have lots of tips for this kind of thing.

Prep Time: 5 minutes

Total Time: 5 minutes

Ingredients:

  • 1 1/2 cups unbleached all-purpose flour
  • 1 cup sugar
  • 3 tablespoons unsweetened cocoa
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 1 teaspoon vinegar
  • 5 tablespoons vegetable oil
  • 1 cup cold water
Preparation:

In a large mixing bowl, mix flour, sugar, cocoa, soda and salt. Make three wells in the flour mixture. In one put vanilla; in another the vinegar, and in the third the oil. Pour the cold water over the mixture and stir until moistened. Pour into 8 x 8-inch pan. Bake at 350°F. oven for 25 to 30 minutes, or until it springs back when touched lightly.

I do the soda + cake mix thing all the time, although I usually do cupcakes. You can use any soda, or even carbonated water. Use a dark soda with a dark cake and a clear soda for a light cake. Really all you do is take the cake mix, add the soda, then bake according to the box, no oil or eggs or anything. My favorite combinations are Devil's Food Cake + Diet Dr. Pepper and a yellow or white cake with Diet Cherry Sprite.

The dark cakes will taste a little more like a traditional cake where, in my experience anyway, the lighter cakes you can taste more of the soda.

I have made this cake in the past, its my go to vegan cake recipe, it is awesome!:thumbsup2

ok so today, I used 1 tb cornstarch + 3 tb water for each egg, I replaced for 2 eggs, even though the mix called for 3 eggs.
the cake came out really good, very moist, a wee bit crumbly, but it tasted great and all the kids loved it!

I will have to also remember the soda trick too:thumbsup2
 
I use applesauce. 1/4 cup = 1 egg.

Yeah, my MIL uses a third of a cup she said. I just called her and she's an amazing baker. I'd think a scant third or a fourth would be about the same.
 
If I am out I use Applesauce, for eggs and oil substitute.

Especially instead of oil in the pancakes. I use it in meatloaf too.
 
Have you ever made a Dump Cake? (The name comes from dumping the ingredients into a pan and baking.)
No mixing, and no eggs.
Of course it is not a traditional cake. But everyone has always liked it when I made it. (Of course it's the butter everyone loves. ;) )


Dump Cake

1 cup crushed pineapple
Pour with juice into a greased 9x13 pan.
1 can pie filling (cherry, blueberry, etc)
Pour over the pineapple.
1 box of yellow or white cake mix
Sprinkle over the fruit.
1 cup chopped nuts (optional)
Sprinkle over the cake mix.
1 1/2 sticks of butter
Cut butter into pats and place on top of the nuts.
Bake at 350 degrees for one hour.
