Breakfast casserole recipe???

I thought I saw a recipe for a breakfast casserole that used either Jimmy Dean skillet breakfast or the southwestern egg beater stuff. I've looked again through all my magazines and still cannot find it. I had no luck googling it either...but maybe I asked for the wrong thing.
Do any of you have any idea what it consists of? I've made the one with the eggs, browned sausage, bread and cheese for years, but now my family is tired of it...(not me..I love it!) and they want something different. I know when I read it, I thought...wow this is what they'd want....but now, I can't find the recipe....I think you made it the night before, and then just baked it the next day.

This recipe was posted on another thread, sorry I do not remember who's it was. My family loves this one! I use JD sausage & dinner rolls(makes a big difference!). I make this the the night before & let sit in the fridge overnight.

Breakfast Casserole

-Layer a heavily greased pan with some sort of bread. You can just lay sliced bread down or you can use the dinner rolls (much better).
-Whisk a dozen eggs
-Cook a tube of breakfast sausage
-Sprinkle cooked sausage over bread
-Pour whisked eggs over sausage and bread
-Salt & Pepper
-Cover with cheese
-Bake at 350 until egg is cooked and cheese is golden brown
 
I found this recipe in the walmart homemade recipe catalog. My family ate it this morning and loved it. You beat 6 eggs and 2 cups of milk in a bowl. Add 1tsp of salt, 1tsp of dry mustard, and 6 slices of bread torn into 2 inch pieces. Mix until the bread is soft. Stir in 2 cups of shredded cheddar cheese, 8 oz of sliced fresh mushrooms, and 1 tube of jimmy dean sausage that you already browned. Pour into a lightly greased 13x9 inch baking dish, cover and refrigerate overnight. Bake at 350 for 40-45 minutes and let stand 5 to 10 minutes before serving. It serves 9.

I made it with 2% cheese and milk and reduced fat sausage and no one could tell the difference. It also made it more figure friendly :)

I might want to make this, but does it have to sit overnight? Also, can I use uncooked biscuits instead of the rolls? Or should I cook those first? I never made anything like this before, but I think DH would like it.
 
Yes - use cooked biscuits or whatever bread you are using. Breakfast casseroles don't have to sit overnight, but they are much better if they do & it takes less time in the morning because all you do is heat the oven & pop it in. I usually let mine sit out on counter to start to come to room temp or I find it takes a bit longer than the suggested cooking time.

To the OP, I saw a recipe in the coupon section of the newspaper a few weeks ago with the Jimmy Dean breakfast skillet mix, but I didn't save it. Perhaps that is the one you saw?
 
No, I do this so all I have to do is put it in the oven in the morning. I would use cooked biscuits or whatever type of bread you have on hand. I think your dh will like this!

What kind of dinner rolls do you use? And they are already cooked, right? How big of a pan do you need...........12 eggs is a lot!! thanks
 
everybody....yes...you're right...that's where I saw the recipe!! In the coupon section of the paper. Maybe they'll put it in again. I tried goggling Jimmy Dean and variations...but no luck. There's lots of good ideas here though!
 
Yes 12 eggs is alot lol I buy the wheat dinner rolls from the bakery, already baked. I use my large casserole dish, you could also use a cake pan.

Tink that was a very good recipe. I'm eating some right now. I used a large casserole dish and 12 eggs didn't seems to fill it much. I ended up using 20! But we will have this all week for breakfast. DH liked it alot. I just used sliced bread since I didn't feel like making those biscuits.

Does the bread bake up firm or is it a bit soft/mushy? My sisters and I have bad memories of a dish my mom tried to make 30 yrs ago that had soggy bread. To this day, I've avoided any casserole that has bread in it!

Jimmy Dean Skillets Country Bacon Quiche

Ingredients:

2 deep dish 9-inch pie shells
5 eggs
3/4 cup half and half or whole milk
Salt
Pepper
1 18oz package of Jimmy Dean Skillets Bacon
1 cup shredded Mozzarella cheese
Directions:

Preheat oven to 375º. *** bottoms of two deep dish 9inch pie shells with a fork and bake 7 - 8 minutes until lightly brown. Remove and set aside. In a small bowl, beat 5 eggs and to that add 3/4 cup half & half or whole milk. Salt & black pepper egg mixture to taste. Set aside. Place pkge of 18oz Jimmy Dean Skillets Bacon in microwave bowl and heat 3 minutes on high heat until defrosted and warmed through. Pour Skillets in pie shell. Top with 1 cup shredded Mozzarella cheese. Pour egg mixture on top of cheese. Bake in a 375° oven 30 - 45 or until knife inserted in middle comes out clean. Let stand 10 minutes prior to serving.

I have one that I love. It doesn't have the sausage in it but it is delicious. Mix 12 eggs, milk - amount like you would if you were going to scramble them. then you add whatever you like. I put in mushrooms, onions, green pepper and scallions. then you mix it all up with cheddar cheese. Then pour it into a casserole dish. on the top put hash browns across the whole casserole dish. Then put more cheddar cheese on top. Bake at 350 about an hour. Delicious and easy.
