We have been to both, and they are very different. Schulas is a typical steakhouse that you might find in any city. It is very expensive, and everything is ala carte. It is masculine decor and a busy place. If you like steak, it is very, very good, but I don't associate it with Disney too much.
The Concourse is in the CR, right next to Chef Mickeys. As you dine, you can watch the Monorail come and go. The decor is much less fancy than Schulas, but more Disney. It can occaisionally (but not always) get a little noise overflow from Chef Mickeys. We like the Concourse, and think it is kind of an undiscovered secret at WDW.
If my intent was to get the best steak I would go to Schulas, but for a less costly meal that is more "Disney-fied" we love the Concourse.
Of course you can also consider the Yachtsman and LeCellier for steaks. We're not big Yachtsman fans, but absolutely love LeCellier.
