The What's for Dinner Thread - August 2014 (recipe index in OP)

.....although Boston Chicken makes a pretty dang good chicken pot pie....

WFDT? :scratchin..........either leftovers, or penne alla vodka with chicken tenderloins....

Our Boston market is still open, David goes there every once in a while he loves their spinach.

Well hello girls! I have followed along here and there, but have not done well managing working outside my home, cooking ( It was the first to go!) and chatting, but I think I am getting better at this working thing.

Brandi- I am glad you are healing, I have been praying for you! I wish I was as dedicated to vegan as you are. I know it is healthier, but I just have no willpower.

PIO- I love your pictures, you knwo I follow you on Facebook. YOur daily picture made my day!

Franadaj- You make me smile! I love your DIsney trips as well as what you choose to eat.

Ellen- no words but I miss you!!!!

KImmar

I love boston Market. We have one in Manchester, but rarely get there for dinner.

Tonight is a simple night supper. Buddy requested hot dogs all week, so he gets his wish tonight I sorted out closets all day and then shopped. I figure I am good just firing up the stove!

Tomorrow I have a turkey I plan to roast. The family and our friends wil be here for dinner. Roasted cauliflower, steamed and then sautéed haricots verts, corn and butternut squash. Stuffing mashed potatoes and gravy with rolls. I am going to bake a Black Forest cake and my friend is making a a chocolate chip cheesecake. My baking has been a disaster lately, so good thing that Jeannie is baking.

Nancy, great to see you back on the boards!

I remember you telling us how much Buddy loved his sandwiches, I didn't realize he liked his hot dogs so much as well!

We worked so much on the old house and got a lot done, so we were really tired when we were done, we ended up ordering out. A Pizza, salad and linguine and clams for me.

Allison, its great to be back! Buddy loves burgers, dog and tuna salad. I bought a big can of tuna, intending that for him,but when I checked the jar of mayo it was LOW! The man is laid off for the winter and is going through mayonnaise like it is water.

I have been craving pizza for a few weeks now. Maybe this week, to celebrate the end of my crazy busy time at work.

....which kind? There's the creamed spinach, and then there's the one with the garlic.....come to think of it, I like them BOTH!

Good Monday morning ladies,

We are to get to 55 today. I can't wait. The wind is to blow though, so that will be a pain. I hate the wind!! But we had a really nice weekend. I didn't get to do what I had planned on doing but that was ok, as I got the upstairs bedroom completely cleaned, organized and put back together. It became a "dump" room during the remodel, so it really needed to get back to being a bedroom. And actually that is the bedroom that Ethan uses when he comes. And he has been a bit out of shape that "his" bedroom was such a mess. So that is finished and I feel SO much better. Then on Sunday we had our 5th Sunday Brunch at the Church which is always a lot of fun, and such good food. After that we went to the High Schools production of "The Wizard of OZ". It was wonderful. Then we went out to eat with a bunch of friends. Last night we sat - and I mean sat - and hardly even talked to each other. We were so tired. But we both slept rally good last night.

Nan ~ I had to do a double take when I saw you posting. I really miss you lady!! Where are you working? I must have missed that. I love Buddy - I think I could live on sandwiches also. Dang, it's so good to see you. Please stick around.

Brandi ~ So glad you are healing in a good way. That is great that David is able to spend so much time with you. His boss is priceless!! I have to admit I haven't seen Downton Abby. We don't have good/strong enough internet to be able to stream living out in the Country. And when they were on we didn't watch. Everyone raves about the show, so maybe I will see it some day.

Kimmar ~ Chicken pot pies are SO easy to make and I usually make at least 3 and freeze 2. They are great for those nights that you don't wan't to cook or need something to take to a sick friend etc. I have never eaten at a Boston Market - truthfully I haven't even heard of them.

Alison ~ Doesn't it feel so good to go through and get rid off. I need to do more but - like you - I am getting it done. You lucky duck - 25 days till your next vacation. I really need to get to planning. Doug has 12 weeks this year and we WILL go somewhere!!!

WFDT ~ White chicken chili and dough gobs

Make it a great day!

Good morning ladies! Holy Cold!!!!!!!!!!!!!!!!! It is freezing here, and snow is on the way. I am not looking forward to it, more because of my ride home than the snow itself.

Ellen- I have been working for a CPA for about t2.5 years now. I am the payroll specialist here. WE take payroll from small companies and either run it through a payroll company, or "after the fact" payroll from others, so I handle any payroll related chores from filing and paying their payroll liabilities to monitoring and responding to their Unemployment claims. I work with Marisa, so you know I am happy!
I miss you too, Miss! I am not good at time management, so figuring out how to work, keep the house etc is a constant struggle for me, but I think after all this time I might me getting there! LOL!

Dinner last night was turkey sandwiches. Yes...Buddy wanted them! He has been splitting a stacking wood, so he tends to eat lunch late, and that consists of any protein I have left on at least three or four sandwiches. Tonight we have leftovers or chicken and barley soup. It all depends on how much he ate this afternoon.

I wish Marisa posted here. She has been using Blue Apron, and has turned into a great cook. She was tired of cooking the same thing day after day, so she started ordering this a few times a week and has discovered she likes to cook Asian themed meals. She got Erica to try it and my DDIL, who was the worst cook ever besides my son Dan, has been a cooking fiend! You know that he adores her and ate no matter whatever she had ready, but he would then "stop in" at Marisa's and raid her fridge! (Dan and Erica live next door to Marisa and Jeff) Since Erica has been using her Blue Apron and the techniques she is learning, she is the one sending a lunch over for Marisa! And Daniel has regained his appetite. He had Erica convinced he was never hungry....and filled up on protein drinks and twinkies. LOL!

For dinner last night we had Vegetable Korma with fresh Naan, I made it but I did it in stages and it took all day.
I chopped potatoes, and then would sit on couch, chop carrots then sit on couch, etc - until I got it all done.

I am very sore today. I might have overdone it.

good thing I made enough for me to eat lunch on all week.

Tonight is pizza and wings. A friend sent it over for us so I would not have to cook.

Brandi- Be careful.

So nice to have activity going on here!

Still trying to get moved out of the old house and we've been making some progress. We worked there three out of the last four days. I already told you all Saturday night I was just too tired to cook so we ordered out.

Sunday I HAD to make pork chops as I had taken them out of the freezer on Thursday. I made them with a berry vinaigrette cream sauce and rosemary. We had green beans and Israeli cous cous as sides, it was really good! I ate the leftovers for lunch.

Last night we had mini cheeseburgers, tater tots and Cole slaw. I had one and Fran had two. I made them too thick, so they were a little hard to eat. I really like the mini buns, I get them at Trader Joes. One burger is just perfect for me, I'm full and no leftovers.

Tonight we will be having Roast Beef and cheddar sandwiches on our way to band. We're trying to avoid drive through restaurants. I made a Prime Rib a few weeks ago and thinly sliced the rest and then froze it in 2 sandwich serving sizes. We're on portion #2 for tonight, we'll have chips, the rest of the coleslaw and some thin mints on our drive up.

Brandi, take it easy. It will take a while to get your stamina back. I'm glad you have leftovers so you don't have to over exert yourself. Rest, recover, your body needs it!

Nancy, interesting to hear about the Blue Apron experience. I've looked into those services and there is never anything that I can fully embrace on their menu. There is always an ingredient or two that just turns me off. I remember that feeling of always eating the same thing back when I was 19 and in my first apartment. I got better about cooking over the next few years, but still had only a few good recipes in my arsenal. For some reason I always revolved my cooking around the guys in my life. I had a period where I was single for longer than I had in the past, so I nursed myself through it with food, but not bags of cheetos or pints of Haagen Das. I read cookbooks, I taught myself to recreate fancy dishes I'd had at restaurants (cause I didn't have the money to go out), and ended up developing a wide variety of ethnically diverse meals.

That's nice Marissa likes to make Asian dishes, that's one of my favorites too. One thing that I love about my current relationship is that Fran goes through food magazines (which I have no time to read) and picks out recipes for me to try, so we always have new things. She gave me a Ginger Chicken recipe and Thai Pork Roast last year.

What I do now is I write out a menu plan which goes for about two weeks, and I plan my grocery shopping based on that. Maybe I don't stick to it (like Saturday when I was too tired), but most of my proteins are in the freezer so I don't thaw them for a day or two and then I make them a day or two later. I totally understand the idea of not wanting to eat the same thing over and over. I save those menu sheets so that I can look back on what I've made in the past so I can remember those dishes Fran found and they give me ideas on how to plan an interesting menu plan. I try not to eat any one protein too often, but I really need to work in more seafood!

Sorry to ramble! Hope everyone has a great day!

Hi there! Well we had a sketchy night last night, but it was clear this morning. Nice and sunny, which it's how I like it on a day home.

I took porkchops out of the freezer this morning, but they are not getting cooked today. We have got to stop having lunch later in the afternoon!!! Buddy bought a trailer load of logs and has been working on them, he said about 8 cord. By the time he gets home and eats lunch, he's not hungry for dinner, and I have been doing the same.

Allison- I need to go back to meal planning, instead of winging it. Clearly that is not working!

So tomorrow nights menu: pork chops, a vegetable mix and potato cakes.
