Help me plan... 2 days in Disneyland Paris

We are headed to Europe for two weeks at the end of February - London, Rome, Paris - and want to spend the final two days of our vacation at Disneyland Paris. We are frequent visitors to Walt Disney World. We always stay in value resorts and are commando park goers... hardly spending any time at the room/resort. But, after two long weeks traipsing around Europe, we are looking at Disney as a relaxing way to end our vacation.

We plan to arrive at the Disneyland on Tuesday evening, hit the parks on Wednesday and Thursday, then catch our flight home on Friday morning. We are two adults with two teens who live and breath all things Disney.

We are debating between the New York Hotel and the Newport Beach. Which do you recommend?

What are the must-do rides, shows and attractions in our limited time frame?

And what should we plan to wear in terms of cold-weather/rain gear? We live in the bitter cold upper midwest, so we are leaving very cold temps.

The Newport Bay has recently had an extensive refurbishment, so will be fresh and new looking, it has a lovely pool, shop and comfortable rooms.
The New York is nearer to the parks when walking and the rooms are bigger. There are 2 sinks in the bathroom which could be a plus with 2 teens. I prefer it, but you would need to accept that the rooms, although clean will be slightly dated.
 
I am very interested in following this thread. We are going to DLP July 29 to Aug 2 and have booked the Sequoia Lodge. We are also Disney lovers and have been to WDW several times as well as DL in California. Now that we have our reservation made the touring planning begins!
 
February is likely to be cold - can change but currently it's between -5 and -2, so go with layers in mind.

2 days at that time of year should be fine. The parks are literally right next to each other with no more than a 5 minute stroll between them so you can easily park hop.

Be prepared for lots of ride to be closed with re-furbs in readiness of the 25th anniversary which starts in April. Pirates, Space Mountain and Star Tours will all be closed. Use fast pass if required for Big Thunder Mountain which has just completed a refurb and looks amazing.

In the studios if you want to ride Crush be there early. The Studios advertises to open at 10 but they often open the gates around 9:30 so you can go for Crush straight away. There is no fast pass for this ride and is generally very, very busy.

Ratatoullie, also in the studios also gets busy. Again you can get fast pass, but if you are all happy using the single rider line then do this instead. Carriages take 6 riders so there is always room for single riders - you can be in and out in 5 minutes compared to waiting for fast pass or the main queue.

Eat in some nice restaurants if you can. Walts in Main St is lovely - you might get to see the parade from a window seat if you time it right, and Chez Remy in the studios is very nicely themed.

Annette's in the Village is nice and if you'd like character dining Café Mickey is good too - characters there until March sometime when it will change.
