Eat at Home 3!

The cupboards here are getting bare, especially produce. I was out yesterday evening so made a pot of dirty rice with smoked sausage from what was available before I left, no veggies. Eating out would have been healthier!

If you have a small fridge or shop infrequently (but you hate canned/frozen produce), try to pick up some "long-lasting" produce when you shop, stuff you can slightly "overbuy" b/c it won't go bad (and if your shop gets delayed by life/finances, it will still be there). With it being fall, squashes, sweet potatoes/yams, carrots (not baby - they rot faster), apples, and clementines/oranges all fit this bill and could help tide you over from one shop to the next. They also have the advantage of being very cheap right now!:)
 
Menu plan for Week of 10/29

Saturday- red beans and rice
Sunday - tortellini sausage soup
Monday - burritos, refried beans, avocado salad
Tuesday- beef and rice casserole, veggie?
Wednesday- braised lamb shanks, mashed potatoes, roasted beets
Thursday- leftovers
Friday- fajitas, corn, black beans
 
We got take-out pizza last night, plain old laziness on my part. Hopefully I'll get off my rear and buy groceries today!
 
The plan this week, and how it's gone:

*chicken quesadillas with guacamole- ate Sunday
*pork roast with salad and biscuits- did Monday
* fall salad- ate Tuesday
*bacon potato soup- will eat next week, had to stay late at work so DH ordered pizza (but at least he used a coupon!)
*grilled sirloin (wrapped in bacon if I have extra- thanks for the idea wdw4lif!) with roasted veggies and garlic bread- had the steak minus the bacon with mashed potatoes instead and bread on Thursday
*chili-orange shrimp (tuna for DH) with spinach couscous- will eat next week, making enchiladas for the guys tonight with some leftover stuff, and I have a potluck at work that I made banana bred for

In addition to the two carry over dishes for next week I will also make:

*cheesy chicken sandwiches with carrots and ranch
* Frito pie (it's a Halloween tradition)
* spaghetti with Italian salad
* beef nachos

These meals will use up some leftover things we have around so minimal shopping will be needed. Next Sunday we are having the Eagle ceremony for DS, then I am leaving the next day to go visit family in Texas. The guys can probably eat off the leftovers from the food we're ordering for the ceremony, but I will also make up a couple easy to reheat meals for them before I leave.
 
Monday: Frozen pizza while we wait for trick or treaters

Wednesday: I have my workout class. Leftovers (with salad if needed)
Thursday: Grilled cheese and tomato soup
Friday: (frozen) PF Chang's tso's chicken, brown rice, broccoli
Saturday/Sunday: DISNEY! Saturday dinner at Morimoto's restaurant at Disney Springs with the group of girls I am doing the wine and dine half marathon with. Sunday is the race (and my birthday!)then going to the parks so we will just eat whenever.
 
Happy birthday westcoastfldisneygirl! Good luck at the marathon. Older DS's girlfriend will be at Disney with some friends next weekend too, but not for the marathon- though the way they do the parks it's like a marathon!

Changed Saturday yesterday and did not eat out. Instead, got a beautiful 7 3/4 lb Perdue Oven Roaster for $.49/lb and I made a nice Lemon Pepper Chicken with homemade giblet gravy...thus, I am now adjusting this week (and we actually had leftover meat - alleluia! Not enough for a full 2nd meal, but enough to make Alfredo, so here goes...)
Sun - Homemade Chicken Alfredo with Sauteed Spinach and Fresh Berry Bowl (Strawberries, Blackberries, Raspberries, Blueberries - stupid good deal at store again for this, but you had to buy 3 - brought one to a dessert party yesterday and it got destroyed, and we'll be using up the other 2 early this week:))
Mon - Philly Cheesesteak Ravioli with any leftover Alfredo Sauce (grownups)/Frozen Pizza for Kids, Berry Bowl
Tues - Chicken Fajitas, Last of Berry Bowl with Sliced Bananas
Wed - Butternut Squash and Apple Soup, Kielbasa, Homemade Beer Bread
Thurs - Meatloaf, Leftover Soup, Blueberry Muffins (any berries left will get dumped in this), Sliced HoneyCrisp Apples
Fri - Meatloaf Sandwiches OR $5 Protein, Baked Fries, Smoothies
Sat - The other Friday meal
We have a nicer night out than usual planned next Sunday, so we're gonna be eating in all week (thus, why we skipped our eat out this weekend, although I may make it up to the kids for lunch tomorrow at IHOP or Noodles and Co where they eat free with a grownup:))...
 
I sat down and did a menu plan for the whole month of November. I also printed all of the recipes I needed and put them into the folder. Half my battle is searching for the recipes after I have bought the ingredients.

I've been MIA lately, computer problems.

Last week we ate out twice. On Sunday we stopped off at a local brewpub (Abita Brewery) for a late lunch on the way home from my father's house. Last night we ate out while waiting for the repairs on DH's phone. All other meals were eaten at home.

I made a huge pot of chili which we had twice-once with cornbread and again in the guise of Chili Frito Pie. We also had pulled pork twice from a pork shoulder that DH smoked.-once on sandwiches, once on top of a southwest type salad. All were served with salad and toppings (chopped tomatoes, cilantro, chopped onions, cheese)

So next week:

We're planning to take our camper to Biloxi, MS on Friday. The plan for now is to eat out on Friday, a picnic lunch and grilling out for dinner on Saturday.

We'll do a Groupon brewery tour ($10) on Saturday afternoon.

We both play MyVegas online and used some of our rewards on free buffet breakfasts and two free drinks each at the Beau Rivage casino. We'll have the drinks on Friday and the breakfasts on Sunday before we leave for home.
 
This is my "clean out my kitchen" week - so it's gonna be catch as catch can. Once I clean it out, anything shelf-stable I don't want that is not near expiration, I'll donate to the Church's food bank (and hopefully, I'll also have an emptier pantry and freezer). I bought my small turkey this weekend (10lb butterball), so I'm gonna need the room for the fixings! It's also Vet week, so with 2 vets, we are eating 2 dinners out. Here's things I will likely be putting out in no order...

Chopped Mango, Sliced Apples, Grapes, Roasted Carrots, Mashed Sweet Potatoes, Mashed Potatoes, Leftover Roasted Cauliflower (made Saturday), Leftover Beef/Black Bean/Butternut Squash Chili (made Friday), Roasted Butternut Squash, Stuffing, Triple Banana Bread

And then I have a Horseradish Lemon Bean Puree (very mild), a Tart Cranberry Glaze, and a few other random sauces to try or to finish/get rid of. I think I will pull out some chicken pieces for the week (maybe pork or frozen white fish, too, if I have it) and try to tie some dishes together. I bought no proteins (except the turkey) at the store, and I had a very small shop for me, so I want to dig to the bottom of my freezer and do rescue this week with what I have. It should be interesting!

Last night DH went to a football game and ate at the tailgate-he brought beer. It took me over 2 hours to drive the 10 miles to drop him off. After so long I was a bit fed up with dodging the traffic and pedestrians so treated myself to some Raising Cane's which I ate while binging on Netflix.

We were supposed to go to a festival today but I just got a call and my uncle passed away last night. We weren't close but I'll need to go back to Dad's to sort out funeral clothes for him. No idea what dinner will be tonight!
 
I haven't posted on here in months! I'm trying to plan! We haven't been eating out much, but I've had to run to the store often, due to poor planning!

Saturday: Going to Key West for the day! Dinner somewhere there. We are doing the Key West Express ferry, so maybe grabbing something on the way home?
Sunday: Chicken marinated in Italian dressing and baked, cheesy garlic biscuits, some kind of freezer veggie
 
Last night was supposed to be poboys but I wasn't feeling all that bread. DH enjoyed it but I thought it was only okay. Pasta would have been better but I have a lot of potatoes to use up.
