What’s for Dinner Tonight?

I’m so far behind in reading and have only “dented the thread”.
Cooking is nonexistent at this time but I still think of your perseverances😎.

N.,my SIL/friend is doing much much better though to be honest we were scared for a bit. Time is really flying and after a few weeks in Paris decided it was time to catch up with nearby friends. Currently in Aachen visiting a friend going through the pangs of empty nesting. Much champagne drinking which has been our get together drink since we first met back in the ‘80s. A great habit to pass along to others, as I plan to do if and when I catch up with “the Swiss Misses”. As I’ve been known to tell em: people do not live on hot chocolate alone, lol. This has been quite the adventure and I’m glad for taking the plunge though regret the initial reasons for it. So far, getting around has been pretty simple.
Still haven’t chosen a return date but that needs to happen soon from a practical POV. Can’t leave my home attendant up in the air at the very least.

Be well, all and I plan to post about food soonest! Keep those home fires and microwaves burning 😘
 
@NYCgrrl I'm glad to hear things are looking up.

Last night was chicken fajitas here at home, but DH and I went out for a cocktail that turned into 2, and Thai food for dinner.

Tonight is undecided. I have to go downstairs, shake thru the freezer, and figure out what we are having. It'll probably be either some sort of chicken sausage, or salisbury steak (as we have braising sauce from earlier in the week to use up).
 
Tonight we have multiple activities going on, and we only have tonight and tomorrow night before we leave for vacation, so it's takeout night. The remainder of our lunches and dinners will be tonight's takeout and trying to use up odds and ends in the fridge. We have a few frozen things we can heat up if we need to also.

Then, we will be aboard the Disney Treasure, and I won't have to think about what to cook for an entire wonderful week!
 
Last night I ended up meeting a couple friends at a coffee house and didn't really feel much like eating when I got home. Ended up soft boiling an egg and cut up some veg to snack on.

Tonight is penciled in to meet a friend for Chinese. Hopefully it will happen because all I can think about is some Szechuan lo mein.
 
Our last night on the island tradition is to have room service on the deck at sunset. It was yummy! We went very basic.. after eating fancy sushi and fresh catch for two weeks. We had chicken Caesar salads, with a kids side of mac & cheese & fries. 🍟 🤣. For dessert, a warm brown butter chocolate banana bread with vanilla ice cream. Delicious!

In the world of sometimes thing suck but it could suck more, my second freezer died. Luckily I have been eating out of it for weeks and was able to move the things that were left to my parents so we didn’t lose any food.

Tonight I had coconut shrimp and peas both from the freezer with rice.
 
Figured out supper- We had Unexpected Cheddar chicken sausages (trader joes), sauteed cabbage and onions with caraway, and some sort of noodle-roni pasta with sauce. There was store-brand rye bread that SIL and the 8yo used as a roll for their sausages. Oh, and applesauce. It turned out pretty good and DD is planning on taking the leftovers for lunch tomorrow.
 
Well, MIL is deep in the throes of dementia and frequently has zero clue who I am when we're face to face, so much so that several times she's dropped the decades-long fake-nice facade and told me flat-out what a terrible person her daughter in law is. She's always ruled the group think roost, so FIL and BIL just stand there awkwardly because interrupting her won't work with her endless looping back to the same conversations. I'm sure they're hesitant to point out who I am when she's looping an angry tirade because she might lash out physically.

Ironically I've been the one who's encouraged DH from the time we began dating not to cut off a relationship with his family. They entirely papered over the ******* that existed long before I ever met him and I became the source of all the problems.

To be clear, I did not use inappropriate language. The word starred out is perfectly ordinary term for conflict that would be appropriate if you were talking with the Pope.

Your story sounds very much like mine minus the dementia.

I'm so glad your SIL is doing better & you're having a great trip. Champagne get-togethers sound very nice. I hope you can extend your visit as long as possible. We expect a recap of all the incredible things you ate, when you get home. :teeth:

@cabanafrau, I just noticed that a lot of what I typed in my reply to you somehow disappeared, before I posted it. Anyway, I wanted to let you know that I'm here, if you ever want to vent to someone who has "been there & done that with the inlaws". I could have typed pretty much everything you said. I also wanted to reiteriate that your inlaws are very lucky to have you, even more so given the circumstances.
