What’s for Dinner Tonight?

Pulled some pork chops out of the freezer the other day and have been trying to think of a different way of preparing them that I haven't done lately. Right now, I'm thinking of doing some sort of smothered pork chop with onions and mushrooms. We have leftover smashed potatoes that should go good with that. :)
 
Reading about tacos and taco salads on this thread decided me on tonight’s dinner: “mild” chili (must have meant to take this on vacation with the kids since I like spices) as well as onion and red pepper sauce straight from the freezer. Heated together and spread on butter leafed whole wheat tortillas and topped with half an avocado and cheddar cheese.
Messy but hit the spot.

Still haven’t finalized the menu for my co hosted Lunar New Year dinner
so made pork and chicken broth in case it’s needed. It’ll hold just fine in the freezer regardless.
 
We have so much leftover food here, I told everyone to use it up. Dd and I went with pulled pork sandwiches with dh’s homemade bbq sauces. (Sweet & tangy for her, Carolina for me.) Ds will dig into the rest of the taco meat. Dd didn’t want leftovers, so he made a couple of frozen chicken cordon bleu breasts. Plus we still have a ton of the arroz con pollo from last night. I hate for any of it to go to waste!
 
Oh, and thanks to whoever mentioned the rice krispie treats a few days ago. I had to stop at the store yesterday for a few things and got the ingredients for them. Had to stop myself from eating half the pan. :oops:

Take-out Chinese for DH and me tonight. Thursdays are DD's and the Resident 8 Year Old's "date night." This came about last September. DH and I both taught on Thursday nights and SIL has band practice, do DD and the little guy were home together on Thursdays- hence "date night." They will do something fun, cook dinner together, go out to dinner, whatever. This semester neither DH nor I teach on THursday evenings, but we've decided to stay "out of the house" so DD/8yo can still have date night. Unfortunately, it's DH's turn to have "crud of the month" so instead of going out to eat, I picked up won ton soup and egg rolls. Not inspiring, but the soup was good and putting mustard on the egg rolls was what DH's sinuses needed!
