What’s for Dinner Tonight?

Tonight is spaghetti. I'll doctor up a jar of sauce from Trader Joe's, grill up some sweet italian sausages, and saute green peppers, onions, and mushrooms (all individually) so folks can pick and choose what they like for topping their pasta. There's also a french baguette and I'll throw together a salad.

Tonight we had chicken Cesar wraps with homemade fries (because there are potatoes everywhere ) and a tomato and cucumber salad because the tomatoes keep coming.

My counter before I head out to harvest and I sent my mom home with a box of tomatoes today.

Marinated some chicken with a Greek-inspired marinade to pop on the grill later. I'll probably spice up some zucchini to grill as well.

Last night, Son, decided that the French white bean soup needed eating so we went through 2 quarts of it. Yep, wild ravening wolves still know where he lives, lol.
He’s taking me out to dinner tonight so the kitchen will remain clean.

Last night's spaghetti was a big hit. Today I am making 16 bean soup, as I have a ham bone to use up. I'll add diced ham, celery, onion, and maybe a can of tomatoes to the bean mix. Because life interfered with my plans, I am trying the quick soak method. Fingers crossed! I also have a cheddar-garlic biscuit mix that I'll throw together to go with the soup.
@LoveDaisy I wished I lived close enough to help you out with your tomato problem! It was a tough summer up here, I guess. Farmer's market tomatoes are about $8 a pound which is a budget buster for us.

Leave it to America's Test Kitchen to come up with something unique: Gochujang Chicken and Tortellini. A mash-up of diced chicken thighs cooked in gochujang, honey, and soy sauce, then tossed with cheese tortellini. The whole thing is topped with Fontina cheese and broiled until the cheese is melted. A really different dish that comes together easily. It's not unlike a Korean dish that uses dumplings in the same way, so maybe it's not that unusual. All I know is it's going onto my "keep" list. It's a little more saucy than the picture indicates. Delicious!

$8 a pound is crazy! Several friends said it was a bad tomato year for them. I was trading tomatoes for cucumbers and squash with them. I struggled with anything on a vine this year. I would gladly share if you were closer!

Please for the love of all that is holy, don't use flour tortillas for your enchiladas. Corn tortillas. Always corn tortillas.

Nice dinner and talk with Son. We ate at Dinosaur BBQ, a local outpost from upstate that his father and I took him to when he was a kiddo. Ordered a giant “obviously he’s missing American food” platter of spare ribs, brisket and short ribs. I was happiest with the side salad that I ate with a slice or two of brisket; he loved everything in an equal opportunity kind of way.

Came home and finished the leftover wine, talking into the wee hours and watching the 9/11 lights.

I don't know if last night's bean soup is waging war on my innards or what, but I have had a stomach ache and sore intestines all day. I copped out on dinner and bought a pre-made chicken pot pie at the grocery store. It should be ready in about 15 minutes. Gonna continue the cop-out and make instant mashed potatoes and bagged salad to go with it. Nobody will complain, they are all just thankful that there's dinner. I have a pretty cooperative crew, here.

Tonight is garbage night and I wanted to clean out the fridge so I could give it a good scrub so we had leftovers. We had an assortment of leftover lobster, grilled chicken, corn on the cob, and tomato salads.

Seems like we are collectively in a bean soup mood
I made lentil caccitore for the freezer today. Which by the way is almost filled to the rim. Voids are just temporary spaces it seems.

Asked son what he wanted for dinner this morning and after the polite “Anything you make is fine with me” answer, he made it known that oxtail stew was wanted. And once again I thank whoever invented the electric pressure cooker. He’s having a cultural ID mixup and couldnt decide if he wanted French or Caribbean version so I made up his mind for him and made Jamaican style.
Oh and by the way there is already oxtail stew in the freezer but no sense in telling him; everything will be eaten in time.

Serving it with sweet potatoes and dumplings. And rice. Because some people can eat all the carbs and never gain a pound
