Taco Salad recipe?

Can anyone direct me to a good (and easy) taco salad recipe? My sister-in-law makes a great layered one but it is really huge and really expensive (lots of meat, cheese and veggies). Anyone have any other ideas? I'm looking for a taco salad to bring to an office luncheon. Thanks in advance!!! :) :) :)
 
Hi Eeyoregal! I just typed this one up to include in a box of recipes for my son's fiance.

Taco Salad
1 lb ground meat
3/4 c water
1 pkg taco seasoning
1 head lettuce
2 c kidney beans
1 - 2 c Cheddar, grated
2 tomatoes, chopped
1 - 2 c carrots, grated (opt)
1/2 bottle French dressing
taco chips, crushed
Prepare meat as for tacos with water & seasoning; chill. Toss with lettuce, beans, cheese, tomatoes, carrots & half the chips. Pour dressing over all & mix. Top with remaining chips. Use plain chips or Doritos.

Hope this fits the bill!

BTW - We've been using great northern beans instead of kidney beans as DH dislikes the thick skins on the kidney. I'm going to try black beans next time - just for a change.
 
Here is one that i found in my recipe stash that i have made a few times.

Messy Taco Salad
A wonderful picnic, potluck or 3-day dinner. Quick and
easy and everyone seems to love it. Optional toppings
include chopped tomatoes and olives. I love to have this
heated a bit the next day or two!!! Prep Time: approx. 10
Minutes. Cook Time: approx. 10 Minutes. Original recipe makes
8 servings. Recipe has been scaled to make 8 servings.

1 pound ground beef
1 pound shredded Cheddar cheese
1 (15 ounce) can ranch-style beans
1 head iceberg lettuce, shredded
1 ounce taco seasoning mix
1 pound thousand island dressing
15 ounces tortilla chips


Directions
1 In a large bowl, toss the lettuce and cheese.
2 In a separate bowl, mix together the dressing, taco
seasoning, and beans.
3 Brown ground beef in a large skillet over medium-high
heat, and drain. Add the ground beef and the dressing
mixture to the lettuce and cheese, and mix well. Refrigerate
until just before serving, then crush the tortilla chips
while still in the bag and combine them with the salad.
 
fluffernutter - you HEAT the lettuce & all? I wouldn't have thought of doing it that way. I'm not sure I'd like warm lettuce . . .

I've been thinking about using pulled chicken next time instead of the ground beef - but that won't help Eeyoregal with something easy . . . unless she has been doing a whole bunch of chicken at once & freezing it that way, like I have.
 


in a square pan or one that you like
one can of fat free refried beans....smoosh it out flat.....
a sixteen ounce container of sour cream....mixed with a pkg of cream cheese.....
make sure the cream cheese is taken out of frige and easy to work with......mix with taco seasoning pkg
put that layer on top of beans.....
drained good size jar of salsa .....mild...medium or hot....to your liking.....
on top of that chopped tomatoes.....and green onions.....
on top of that.......a container of guacomole.......
and on top of that shredded cheese to your liking......I used the mexican cheese.....
and if you want......some black olives.......blaaaaah
so put it in frig after and let it get firmed up......
serve with tortilla chips......
easy.....not to expensive......and goes first at any party
 


I make a salad similar to Pumba- EXCEPT 1) omit the guacamole 2) I layer either the tomatoes or the salsa, but not both 3) I haven't used green onion or black olives (they would be yummy) either 4)I skip the refried beans too, because DH doesn't like them


If I were making it now:
Layer cream cheese/sour cream/seasoning mix (on top of beans if you decide)
Add (drained) Salsa
Top with Shredded lettuce and shredded cheese (Mexican blend)
Tomotato/Olive/Onion on top for color
Chill, serve with tortilla chips (we like the bite size Tostitos)

Here's a my favorite recipe for Taco Salad....aka....Dorito Salad

1 lb. ground beef
1/2 head lettuce, shredded
1 large or 2 small tomatoes, chopped
1 green pepper, chopped
1 onion, chopped
8oz. shredded cheddar cheese
1 large or 2 small bottles of Catalina salad dressing
2 small bags or 1 mega bag of Doritos

Cook meat, drain. While meat is cooking chop tomato, onion and green pepper. Mix together with meat, cool. If not serving right away don't add remaining ingredients until just before serving. Otherwise, put you meat in your serving bol, add layer of cheese and then a layer of lettuce. Crush one bag of Doritos and pour on top of lettuce. Add salad dressing and mix it all together. Can be served by itself or with whole Doritos for dipping.

This recipe is usually a big hit at our BBQ's and potlucks and it is so easy to make.
