Looking for a GREAT moist cornbread recipe

I am hungry for cornbread. Any great moist recipes out there? I need to get some stuff from the store before they close around here.
 
This is a spoon bread instead of a traditional corn bread. It tastes like the corn cake that Chi Chi's used to serve. It is a family favorite around here.

Ingredients:

3/4 cup cornmeal
1/4 cup sugar
1 teaspoon baking powder
1/4 teaspoon salt
1/4 cup melted non-dairy margarine or oil
1/4 cup water
15 oz. can cream-style corn

Directions:

Mix all ingredients until combined. Pour into greased 9 x 5 inch loaf pan. Bake uncovered at 350 degrees for 40-45 minutes, or until liquid is absorbed. Serve as a side dish or dessert.

I don't have an exact recipe, but I have made cornbread from a mix, substituting plain or vanilla yogurt for some of the liquid in the instructions, and adding a can of creamed corn. I don't know why yogurt makes baked goods more moist than water or oil, but it seems to.

I used orange flavored yogurt once, it was yummy!
 
The best one I've ever had uses a box of Jiffy Corn bread mix and a can of creamed corn-that's it. Soooo moist and sweet.
 
This is the recipe that Disney sent me when I emailed them about the Trails End/Hoop Dee Doo cornbread recipe. It isn't quite as good as the stuff served there but it is really good. I make it all the time.

Corn Bread
from Wilderness Lodge & Fort Wilderness

Yield: 12 servings.

13/4 cups all-purpose flour
3/4 cup cornmeal
1 1/4 cups granulated sugar
1 1/2 teaspoons salt
1 tablespoon baking powder
1/2 cup vegetable oil
2 large eggs, beaten
1 cup milk



Heat oven to 375 F.

Combine flour, cornmeal, sugar, baking powder, salt. Add beaten eggs along with milk and vegetable oil. Use a whisk to stir mixture, mixing only enough to incorporate the elements. Pour batter into baking pan that has been coated with nonstick cooking spray.
 
I too use the jiffy mix, but i and 3/4 c frozen corn, 1 c grated chedder cheese and some chopped chive, and 2T extra milk
 
I like the Jiffy mix with whole corn added.

Off Topic- Am I the only one who is grossed out by the word "moist"? [shudder]
 
Here is my favorite secret recipe for corn bread.....


Step 1. Get in the car
Step 2. Drive to KFC
Step 3. Order Corn Bread
Step 4. Eat Corn Bread

Our KFC's don't have cornbread, but we have Cracker Barrel and they DO! I buy their mix and follow the instructions.

My daughter makes hers from scratch. Her recipe:

1 1/2 c. buttermilk
2 eggs
1/2 tsp salt
1/2 tsp baking soda
1 1/2 c. cornmeal
1/2 cup flour
1/4 cup melted butter or margarine

Beat the first first five ingredients together. Stir in cornmeal and flour. Add melted butter, mix, pour batter into greased, 8" square pan. Bake at 425 degrees for 30 minutes or until golden brown.

She does use the coarsely ground cornmeal.

Why on earth would moist gross you out? I have had cornbread that was so dry it would make me choke on it. That is why I requested MOIST cornbread!!

I found a recipe that I changed around a bit. It turned out GREAT and MOIST!!

Southern Style Cornbread

1 cup yellow cornmeal
1 cup white cornmeal
1 1/2 cups flour
2 tsp. salt
1 tsp baking powder
3/4 tsp baking soda
2 TBLS sugar
3 eggs beaten
2 1/3 c. buttermilk
1/4 c melted butter
1 TBLS oil or bacon grease for coating pan

Preheat oven to 425. Put oil or bacon grease in 10 inch iron skillet to coat pan and place pan in oven while making batter.

In mixing bowl combine both cornmeals, flour,salt, baking powder,baking soda, and sugar.
In another bowl wisk eggs, buttermilk,and melted butter. Combine with dry ingredients until all are moistened. Batter will be thick like pancake batter.

With heavy oven mitts lift skillet out and turn to coat all sides of inside surface with the oil. Pour in batter and return to oven. Bake for about 20-25 minutes or until brown on top. A toothpick should come out clean when inserted into center. Brush with melted butter after removing from oven.
 
We love the Trader Joes cornbread. DH makes it and adds about 1/4 cup of honey to it. It is yummy.
 
I am picky about good cornbread. The absolutely best box mix is Krustez Honey Cornbread. Just the right amount of sweetness, light and moist.

Maybe she means the word, not the texture. My DH can't stomach the word 'savory' for some reason and my DS11 can't stand the word 'cartilage', I have no idea why and neither do they:upsidedow

Now, THAT sounds great! Skillet cornbread is the best...I'm just too lazy to do it. I'm copying your recipe as we speak...er...post. I actually prefer white cornmeal to yellow, but the combination sounds yummy. Buttermilk is always better than plain milk. Thanks!

Years ago, we were able to buy Marie Callendar's cornbread mix in a pull-top can. Had the honey in it, and was the best stuff...very easy to make! Does anyone know if they still make it? Used to buy it at King Soopers in Denver.
 
We usually go by the recipe on the bag of Martha White cornmeal. You have to put oil in the cornbread AND in a heated pan. I use a cast iron skillet to make mine, always turns out good. :goodvibes
