We'll be staying at the Hyatt MCO the day we arrive before the cruise, I know that some of the stores/food spots in the airport are accessible to the hotel guests and some are not; I'm looking at the MCO website right now and trying to figure out what my options are - but I'm not sure which areas are open to use by guests and which are not. Can someone point me in the right direction?

Everything that is listed as being in the Main Terminal is outside of security and open to the public. Anything that is listed as being in the gate areas is inside of security and wouldn't be accessible unless you have a ticket to depart that day. Importantly, the main food court in the middle of the airport is accessible.

At the Orlando airport, you need to go through security and take a monorail to get to the gates. As Sykes said, all stores and restaurants listed under Main Terminal on the website are accessible to anyone at the airport, since you don’t go through security to access them.

They don't actually say main terminal on the website is Airside the same as main terminal?

You can always grab an uber to a store just down the street if you need groceries. Otherwise depending on time food court is open but not super late and there is a Starbucks.
Disney store
Universal store
And a handful of other stores

The hotel has 2 restaurants - this is more a matter of trying to make a plan for things to do if we get bored while at the hotel. Our Arrival time is at like 4pm which gives us at least 8 hours to kill before bed.

There is good sized food court accessible to people staying at the MCO Hyatt. We stay the night at the Hyatt MCO often. The food court with Chik-fil-a is the one accessible. I belive there is a pizza and either a Burger King or McDonalds. Not sure what time you fly in but they do close around 10 I think. We fly from the West Coast and on several occasions gotten in late at night and the food court was closed.

We have a Fire stick we take with us and watch Disney+ in the room. :)

As someone who has had to deal multiple times with hotel TVs that were left disconnected or not re-set to the broadcast tv, PLEASE remember to do that before checking out. It's just rude to the next people in the room. If it's just disconnected, housekeeping may find it - but if you've left the tv not on Broadcast, it's not intuitive for many people - especially since remotes are so different.

Same goes for insisting on using your own thing on the cruise ship.

We really like the Hyatt pool.
(We fly in from the west coast, so we get in late, but the kids are jetlagged.)

Hmmm will they take a roku stick? Or is Roku a firestick? My wife is the techie in the family.

They are two different companies but the same thing. Most hotel TVs have a spare HDMI port and you can switch the input on the TV or if there isn't an option to do that on the remote, you can unplug whatever is already plugged and plug your Roku in. Just make sure, as a previous poster said, to put it all back to rights when you're done! :)

With that much time I would consider ubering to Disney Springs or the Boardwalk or even City Walk for dinner and walking around there for a bit. We've stayed at the Hyatt a couple times, and it's great! But it's in an airport... not the most entertaining place to spend 8 hours. It's been a while but I feel like we have landed around 5-6, eat dinner, and are trying to get my kid to bed around 8... if we got there earlier and weren't worried about bedtime I'd head towards Disney or City Walk.

I did some googling and looked through all the photos and I don't see any hot tub in any of them. Here's a photo I found that seems to cover the entire pool area.
