Healthy/Healthiest gumbo recipes?

I think gumbo is relatively healthy to start with. I guess one option would be to make your roux with oil instead of butter. You could control what kind of oil you wanted to use. Don’t add any sausage and use more shrimp or white meat chicken. Don't serve it over rice.

What's a good healthy substitute for salt?
 
I don't use salt when making chicken broth and don't add salt when cooking gumbo. Lots of paprika and garlic will also help.
