Ok, here are all the magic shots I know of. If anyone is reading this and wants to be surprised, here is your warning to skip this post. Also, all the photos posted are not mine, just images I found on a Google image search.
There are certain magic shots that can be taken at every park. They are:
Stitch ground - Stitch pops out of the ground while you point and look surprised. The photographer gets the people to point to the ground and look surprised. Sometimes he pops out of a prop box the photographer will give you.
Tinkerbell - Tink can be done almost anywhere and is one of the most popular. The position is to either hold one hand or both hands out. In every park Tink will have a slightly different pose. For example, in Animal Kingdom she sits in a hand and in Magic Kingdom she hovers.
Balloons - You hold a fist or thumbs up above your head or to the side and they put colorful Mickey balloons in your hand.
Now for park specific shots...
Magic Kingdom - I don't work here so this is to the best of my knowledge:
Sebastian - You hold out your hand and Sebastian (the crab from Little Mermaid) is in it. It is only done by the Little Mermaid ride in Fantasyland
Prince Naveen - You put out your hand and frog Prince Naveen (Tiana's prince in Princess and the Frog) is there, making a kissy face.
Chip - You put out your hand and Chip (the teacup from Beauty and the Beast) is there. Only done by the Beauty and the Beast area in Fantasyland
Hitchhiking ghosts - you put a thumb out like you are hitchhiking and the ghost from Haunted Mansion stand next to you. Done ONLY during Halloween and in front of the mansion
Epcot:
*Most Epcot Magic shots are done around World Showcase
Chip (done in France)
Butterfly release - you sort of cup your hands and a set of four butterflies comes out. This example is not the best.
Butterfly single - you put your hand palm down and a single butterfly lands on it. I can't find an example of it online.
Wings - you slightly turn around with your shoulder towards the photographer and they put fairy wings on you. I can't find an example and it isn't done much.
Stitch bench - you sit on a bench or curb and Stitch sits next to you eating an ice cream cone. I usually make the kids cross the arms and look angry at stitch as if he ate their cone or if he is just being rude.
Animal Kingdom:
Now with both butterfly poises!
Simba - You hold your arms like there is a baby and baby Simba is there. Note that this is hard to get looking right and I usually only do it with kids 7 or up.
Brand new! Jiminy Cricket: Now you put your hand palm up above your head and Jiminy Cricket will float in on his umbrella! No images of it made it online yet.
Hollywood Studio:

Chip - By the Beauty and the Beast show
Stitch Bench
Mike: This was out during the summer to promote Monter's U, went away, and is back again. You make a "monster" pose and Mike "photobombs" with his pose. This uses to be only out in front of the park but now I think it can be done everywhere.
Darth Vader: You get a prop lightsaber and fight Darth Vader. Done by the Star Wars area. I swear that is a magic shot, not a real person.
Announcing a brand new shot! It's still in testing so I wouldn't give much away *drumrolls*
OLAF! You will stand next to Olaf from Frozen as he dances under his snow cloud.
So that is everything I remember. I'll edit this if I think of anything else. I will leave with a list of magic shots no longer done:
Mickey sitting (I miss this)
Minnie sitting (This too)
Lilo sitting
Soarin' flying over
Princess Tiana as a frog
Also, I see some Captain Hook shots similar to the Darth Vader ones online. I haven't seen them here so I think it might be a CA thing only.
Just a note when asking about magic shots - not every photographer can do everything. Also, don't just pose. We have to "tag" the shot into our equipment. Also, it'll look better if we help you into the position. Please just be nice when asking. If something looks familiar, just say you've done it and they will probably (not always) so something else. Remember many things can go in the palm of your hand so even if you think you are taking three Tink shots you could be doing a bunch of different things.
