Favorite recipe for boneless skinless chicken breast

Chicken breasts cut into strips and soaked in buttermilk or slathered with honey mustard. Roll into combination of panko/regular bread crumbs seasoned or plain. I bake on my cooling rack tucked into a cookie sheet for about 25 minutes. Sometimes I serve with dip and sometimes I put into sub rolls with sandwhich toppings and favorite sauce.


Chicken and spinach quesadillas or turned into sour cream enchiladas.

Today I made mexican chicken casserole with cream of crap for my husband's potluck.
Cook up diced chicken with onions and green pepper.
Mix in drained black beans, can of rotel, and 2 cans cream crap(whatever makes you happy) and some cheese.
Crush up some tortilla chips into your casserole dish and top with chicken mixture and then top with more cheese. Bake at 350 for 25 minutes or so.

Grilled chicken sandwiches. Marinate chicken in cup italian dressing, juice of 1-2 limes and 3 tbs of honey. Grill like normal.

Diced chicken cooked up with a honey/soy sauce and served with shredded cabbage/carrots in lettuce cups.

BUFFALO CROCKPOT CHICKEN is one of our favorites.

Three boneless breasts..can put them in frozen.
One envelope Hidden Valley Ranch Seasoning
One small jar Franks Hot Sauce
One teaspoon butter

Cook all day...shred and put back in an hour before eating to absorb all the juices. Serve as rollups in flour tortillas.

If too spicy, you can also add a litte cream cheese.

We use this recipe for to make buffalo chicken paninis. I place the shredded buffalo chicken on sourdough bread that has blue cheese dressing spread on it and then top it with cheese (cheddar or monteray jack both work well). Grill on a panini press until the cheese is melted. Yum!
 
One of my favorites:

CRUNCHY CHICKEN BAKE

1 env. Lipton cream of chicken flavor cup-a-soup
1/3 c. hot water
2 Chicken breasts
1/2 c. dry bread crumbs or crushed herb seasoned stuffing mix
1 tbsp. butter, melted

Preheat oven to 375 degrees. In medium bowl, blend cup-a-soup with water. Dip chicken in soup mixture, then in bread crumbs. In 1 quart oblong baking dish, place chicken and drizzle with butter. Bake 45 minutes or until tender. Serves 2.
 
My son's favorite is just breaded (italian style bread crumbs) and baked. He dips in buffalo sauce, my daughter dips in BBQ. I usually thin the breasts so they cook faster.

My favorite is marinade in italian dressing and grill. Serve with mango salsa.

Also my favorite warm weather meal is marinaded and grilled. I buy a large bag of salad greens and add shredded mozzarella, avocado, cucumber, tomatoe, onion and toss with balsamic vinegar and olive oil. I usually toss in some fresh basil. Served with fresh italian bread and it's a meal.

I do variations of this all summer. You can change the protein to grilled shrimp or even a small london broil. If I use london broil I change the cheese to shredded cheddar and the dressing to lime juice and olive oil.
 
DH's favorite is one that I think I got right here on the DIS:

Rub taco seasoning into chicken. Put in baking dish and pour salsa over the top. Bake until chicken is cooked. Sprinkle shredded cheese over the top and bake for a few more minutes until the cheese is melted. Serve with sour cream.
 
THANK YOU! I defrosted chicken breasts for dinner tonite, and was getting sick of the same old same old. You and I will BOTH be trying this one out! It sounds delicious!
:thumbsup2 We shall have to report back to each other on it! Obviously you don't have to use gluten-free breadcrumbs! We have to since our DD13 has Celiac Disease.
 
Two of my favorites:

Chicken Schnitzel
Pound chicken thin or buy thin sliced chicken breasts. Dip in egg mixture with garlic and parsley, then coat in bread crumbs (I sometimes add Parmesan to this). Pan fry for about 4 minutes per side. I serve with buttered egg noodles, gravy, and a green veggie (usually peas).

Chicken phillies
Cut chicken into strips, sprinkle with seasoned salt, and sautee with green pepper and onion. Once done, separate into little piles in the pan and melt a slice of smoked provolone over each one. Use spatula to scoop into hoagie roll.

Finally, the Kraft Fresh Takes are pretty good too!
 
We make that too but add 1/2 bottle Russian dressing.

Which type of Russian dressing? In the south Russian dressing is a dark red dressing similar to a Catalina. When I was visiting my in laws in CT I ordered Russian dressing and I ended up with something that was similar to Thousand Island.
 
I put them in oven til almost done then pour a cranberry sauce over it and finish baking. Sauce is one can jelly cranberry sauce, one bottle of Chili sauce, 1 teaspoon lemon juice, and brownsugar to taste. I love it sweet so I make sure to add enough. I melt all over low heat then pour over chicken about 15 min before chicken is done.
 
Chicken tacos:

2-4 chicken breasts
1 package taco seasoning (or if using homemade seasoning, the amount you'd add to 1 lb ground beef)
1 can black beans, rinsed and drained (I use low-sodium)
1 can corn, drained (I use frozen and just approximate how much)
1 can rotel

Put chicken in bottom of crock pot. Sprinkle with about 1/3 of the seasoning.
Mix everything else, including the rest of the seasoning, in a bowl and then dump on top of chicken.
Cook on low 8 hours (maybe a little less--just make sure your chicken is done).
Pull out the chicken; shred it with 2 forksl; put it back in the pot and stir.

Serve in tortillas with whatever toppings you want.
 
One of my kids favorites....
Cut some boneless/skinless breast into "chicken strips."
In a ziploc baggie mix in almond flour, salt, pepper, dried onion, granulated garlic, and italian seasoning.
Drege through some egg and the toss in a ziploc to coat.
I cover an cookie sheet in aluminum foil and melt coconut oil. I lay the chicken strips out on the sheet and bake at 400 for about 25 minutes.

One of my favorites when it's just me...
I cut up the chicken into small bite-sized pieces and toss into the cast iron pan with coconut oil, onions, red peppers, zucchini, salt, pepper and paprika. Stir fry it together and then add some spinach and toss. Nice easy little stir-fry and you can change up the spices to change the flavor if you choose.
