I have to try those bacon bits! I keep walking by them at Costco and they look so good.

New to this thread, but I'm on a mission to stay healthy and save money! We have a huge Aldi's close by and I have started shopping there almost exclusively. We are definitely saving $$!

Tonight (Friday): Baked Manicotti, Garlic Bread & Beet/Arugula/Feta Salad with Balsamic and Olive Oil.

Gotta get my weekend plan in line and then I'll post more. :thumbsup2

New here, but I love to meal plan, so here's ours! We don't eat grains, beans, or dairy, and severely limit our added sugar intake (usually honey only every now and then, and whatever is in our bacon. Gotta have bacon haha!). We basically follow a paleo diet (feel free to ask questions if you're curious!) most of the time and splurge every now and then (and definitely in Disney!). Most of our dinners are just protein and veggies, but we eat tons of veggies (and sweet potatoes) to get our carbohydrates in so don't be alarmed. You could still use my ideas if you do eat grains and just add in some rice or whatever.

Sunday: Pan fried chicken breast, mashed cauliflower, green beans
Monday: Roasted lemon-herb chicken leg quarters, baked sweet potatoes, roasted broccoli
Tuesday: Paleo Tex-Mex Casserole (with ground pork instead of beef)
Wednesday: Garlic shrimp, zucchini fritters, honey-glazed baby carrots
Thursday: Dill salmon, asparagus, cauliflower "rice"
Friday: Salisbury steak, mashed sweet potatoes, brussels sprouts with bacon
Saturday: Steak fajita salad

We don't eat out at all, so I try to make enough for leftovers for lunches for us all (though our kid eats a "normal" diet and has PBJ a lot :) ). Breakfast is always eggs (sometimes bacon too) fruit, and coffee.

I am new to the boards but meal planning is super helpful to me! Here is what dinners I have planned for the week:
Sun: Stir Fry
Mon: Scrambled eggs, seasoned home fries, fruit

tomorrow - stir-fry with noodles (chicken is all cut an marinading)

Tuesday - stromboli - one meat one, and one veggie one

Wednesday - chicken pie/asparagus/biscuits (hoping to have chicken pie prepared before going to bed tonight)

Not a full week, but it's a start.

Tonight- tuna melts and salad :) I am not a fan of springing forward, it is really messing with mealtimes....
