For Star Wars you could make Ronto Wraps. I made those and they were easy and yummy. You could google the recipe, I'm sure.

Alice in Wonderland- A whole tea party or just tea and scones

Inside Out- Broccoli pizza!

Big Thunder mountain- At Disneyland this ride is right next to Rancho Del Zocolo, which serves bbq , tacos etc

Snow White- Apple pie or other apple treat

Toy Story-I would say pizza because Pizza Planet is always mentioned or visited in the movies.
For any of the movies set in England, tea, scones and finger-sandwichs.

Cars-Classic midcentury diner/drive-in food (fried chicken, hot dogs, hamburgers, milkshakes, ice-cream)

Sleeping Beauty-I have two ideas, which may be more complicated than what you are looking for/have time for. Cake with pink and blue frosting, or cookie sandwichs, some with pink frosting and some with blue frosting (take chocolate chip cookies, and make a sandwich with two of them using frosting/icing in between the cookies. Make some with pink frosting/icing and some with blue frosting/icing) If you wanted to tie it a ride/attraction, there is also the castle walk-through as another option.

Pirates of the Caribbean-Caribbean food

I would do a version of Tom Sawyer for Tom Sawyer island, and serve fried chicken or picnic food (It's been ages since I read the book but I am almost sure there is a picnic where they eat fried chicken)

Alice in Wonderland – > Alice in Wonderland --> Finger Sandwiches, stuffed mushrooms, jam tarts, or little "eat me" and "drink me" tags on pretty much anything!
Big Thunder Mountain Railroad --> No movie suggestion (any western, I guess?) but there used to be a BBQ place there, Big Thunder BBQ, so I'd do that!
Buzz Lightyear Astro blasters – > Toy Story --> Pizza (Planet)
Casey jr. circus train & Dumbo the flying Elephant - Dumbo (1941) -->Elephant ears?

Haunted Mansion → Haunted Mansion --> Not a specific Disney food, but some of those fun Halloween type foods, like peeling grapes to be eyeballs and using hot dogs to look like fingers
Indiana Jones Raiders of the Lost Ark --> All the IJ movies. Food...?? Is there something associated with snakes?
It's a Small World Tomorrowland -->You could have a lot of fun trying international foods for this one!
Jungle Cruise The African Queen --> Movie: The new Jungle Cruise with The Rock
Mad Hatter Tea Party --> A tea party!
Many Adventures of Winnie the Pooh --> Homemade tigger tails (marshmallow wands with caramel and chocolate) or something with hunny
Matterhorn bobsleds Third Man On The Mountain 1955 --> You could attempt making those coconut matterhorn macaroons
Snow White's Enchanted wish --> apple-y things
Space Mountain --> Astronaut ice cream
Splash Mountain song of the South --> Collard greens
Tiki Room - Dole whip! You can find copy cat recipes, or if you have an ice cream maker you can get the actual mix on Amazon and make it in your ice cream maker

There are lots of copy cat recipes out there, too, so you can recreate foods from various lands. For example, to go with the Cars stuff, I made these Red's Apple Freeze's at home. I also made Monte Cristos, Tigger Tails and Dole Whips. Google "Disneyland Copy Cat Recipes" and you'll come up with lots of ideas.
