People have been commenting that all the cookie threads are useless without recipes, so here we go! What’s your all time favorite holiday cookie recipe?
Here’s two of mine:
Black Forest cookies
2 cups of flour
⅔ cups cocoa powder (dark)
½ tsp salt
2 sticks unsalted butter, softened to room temperature.
1 ⅓ cups sugar
2 large egg yolks
4 tbsp milk.
2 tsp vanilla extract.
Combine flour, cocoa, and salt in bowl. Set aside.
Beat butter and sugar until light, 2 minutes. Add egg yolks, milk and vanilla. Reduce speed to low and beat in flour mixture until just combined. Refrigerate.
Roll into a ball about the size of a walnut. Using a spoon, make an indent in the cookie and fill with sour cherry jam.
Heat oven to 350*.
Bake for around 12 minutes. Cookies are very soft and fudge-y.
When they are cool drizzle them with melted white chocolate.
Eggnog cookies
3/4 cups butter
1 and 1/4 cups sugar
2egg yolks
1 tsp vanilla extract
2 and 1/2 cups all purpose flour
Pinch salt
1 tbsp + 1/2 tsp baking powder
1 tbsp cinnamon
1 tbsp + 1/2 tsp nutmeg
1/2 cup eggnog
1tsp rum extract or rum
Preheat oven to 350*
Beat together butter and sugar.
Add egg yolks and vanilla.
Add flour, salt and baking powder and spices. Mix until just combined.
Add eggnog.
Roll into balls and press with cookie press, or freeze in a “log” shape and cut as disks.
Bake for 10-12 minutes
Decorate with rum glaze or colored sugar.
