2 Ingredient Corn Bread.......YUMMY!

I was looking for a side for dinner tonight and rummaging through my cupboards to find 2 boxes of the Jiffy Corn Muffin mix. Well, they've been sitting there because I find the "normal" recipe to come out dry. So I looked up corn bread recipes on allrecipes.com and came across a recipe for cornbread with only 2 ingredients - well 3 but I omitted 1.

2 boxes of Corn bread mix 8.5oz each
1 can of creamed corn
1 tbsp of brown sugar (I omitted this because I didn't want the corn bread too sweet)

I am a little surprised at how moist it came out and tasty too!

I do a more elaborate corn bread with green onion, bacon, cheddar cheese (sometimes), and jalapeno pepper when I have time to putter in the kitchen but this was a great quickie recipe :thumbsup2

My Mom used to make a similar type of cornbread, with canned corn and butter. No eggs no milk... and boy was it good!

I'm gonna try the creamed corn type, I'll bet it IS good!
 
It is a good recipe. I usually do one box at a time and just add a small can of creamed corn and the egg.
 
Thanks! I made some cornbread like this about a month ago, but the recipe was more involved. I like quick and easy. I'll have to try this one! :)
 
It's delicious. There used to be a restaurant called Chi-Chi's. They served this cornbread, but they called it Corn Cake. It's described as a sweetened corn pudding. But mine was never that consistancy. Mine was thicker. Yum!

If you add extra milk to the original Jiffy mix, your cornbread will be moist and fluffy.:)

Have you ever made the pancakes listed on the side of the box? Heavenly!!! They absorb all the syrup. Yum.

Another two ingredient recipe that is no-fat and delicious is one box of angel food cake mix, stirred with one can of crushed pineapple (with juice). Bake (can't remember the temp, probably 350). If you serve it with no-fat cool whip, even better!

I tried the cornbread last night. I used one box of Jiffy to 8 oz. creamed corn. I think it's too much creamed corn, though. I love cornbread, this just tastes too much like corn. Next time I may try half as much creamed corn.

DD was horrified that there were actually pieces of corn in her bread. She refuses to eat it!
 
We watched Alton Brown last evening, and he was making Johnny cakes. Yum. I think that we will be trying his recipe this weekend. He used frozen corn rather than canned.

The 1st time I had "real" cornbread with real corn in it I was a little surprised too but I find it very tasty and it adds a texture.
 
My SIL makes this recipe, it is always a hit.
