Christmas cookies ideas!!!

How many cookies do you normally put on a cookie tray?

Thinking of making a cookie tray for Christmas Eve. I will definitely make the Peanut Butter Blossoms and chocolate chip. And maybe like a ginger/molasses type cookies. Plus I would like to make those little pretzel bites with the hershey kisses on them.

What are your favorites? I would also like to do things that can freeze well, so I can get a few things done ahead of time.

The only cookies I make are chocolate chip. They are the only ones my family really likes.
 


I make oatmeal with white chocolate & cranberries, frosted sugar cookies, gingerbread men & dinosaurs, mexican wedding cookies with pecans vs walnuts, chocolate chip, devils food cake batter cookies with andes mint chips, rice krispie treats with the holiday krispies and chocolate covered pretzel rods.

You can make a lot of the doughs early and fridge or freeze them.
 


I love baking Christmas cookies! I’ll make molasses ginger cookies soon because they make a ton and they keep forever. I’ll be making orange cookies, chocolate crackled cookies, butter cut out cookies, Mexican wedding cookies and butterscotch gingerbread cookies for sure. I’ll probably go overboard this year and make cranberry orange cookie, classic thumbprints, apricot cream cheese thumbprints, fudge, and magic cookie bars. And probably some other recipes that I’ll find.
 
This was my cookie tray from last year (with my sister's in the back. My mom hates making Christmas cookies so that's what she normally asks us to bring.) I love making christmas cookies.

My tray included:
-- Shortbread cutouts (my mom's favorites)
-- Chocolate chip (my husband and I have an ongoing dispute about whether chocolate chip count as "christmas cookies." To me, those are "everyday cookies" but his mother apparently only made homemade ones at Christmas. Otherwise, they were a Chips Ahoy family. Everyone likes them, though, so we include them.)
-- iced sugar cookies
-- peanut cluster candy and homemade caramels (in the jar)
-- a new recipe I tried that were homemade but similar to Pepperidge Farm Milanos (probably will not make those again).
-- non-iced sugar cookies (a different recipe than the iced ones. This is my husband's grandma's recipe and I'm the only one in the family who can make them taste like hers did. It took me 10 years to get it right, but I did!)
-- orange cake cookies (my dad's favorite)
-- ginger-doodles

My sister's tray has some of the same things as mine, but also some different things. I know she made 7-layer bars, peanut blossoms, and buckeyes (peanut butter balls for you non-Ohioans), and some sort of candy she makes with chocolate, caramel and saltine crackers.

So far I have made fudge (DS's choice every year), chocolate chip and chocolate orange cheesecake bites (DD and DIL's choice).
I still need to do the Peanut Butter Blossoms (DH), Haystacks (DH), sugar (DGD), Whoppers (DD-gluten free) and probably gingersnap.
Could be more.
We leave for WDW Tuesday and when we return in self imposed quarantine, so I might do some others
 
My family insists on having my frosted sugar cookies, so I usually concentrate on making tons of those. If I make a tray to give away, I arrange them with handfuls of Hershey's Kisses or some other type of pretty wrapped candy.
 
I use to make frosted sugar cookies and fudge. The more the better! Enjoy your Christmas baking and I will pm my address to you soon. ;)
:goodvibes Maybe I should send you mine! Christmas baking is more of an arts-and-crafts project around here than actually making food anybody will eat. My DH and DS are a pair of weirdo that don't really like sweets and couldn't care less if I ever make anything. Honestly, it's kind of disheartening for someone who likes to nurture through food. Normally, there's a ton of festive parties and gift-giving opportunities where I can "express myself" but not this year. I'm still going to make my bare-minimum, non-negotiable favourites: ginger snaps, rolled and decorated sugar cookies, whipped shortbread (piped into rosettes), jam thumbprints (so delicious rolled in toasted walnuts) and coconut macaroons. And fudge - the fudge will probably actually get eaten. Here's a recipe and for anyone that hasn't tried it - you can thank me later.

Easy, Amazing Fudge
1 can sweetened condensed milk
2 full cups chocolate chips (measure this, one regular bag will not be enough)
1 tbsp. butter
1 tsp. vanilla
pinch salt

Combine milk and chips in a heavy bottomed sauce pan and heat over a very low heat, stirring constantly until the chips are melted. Stir in butter, vanilla and salt and blend well - it should be thick and glossy. Pour onto a greased plate and refrigerate until firm. Takes about 3 minutes start-to-finish.
 
I made most of my cookie doughs back in October and put them in the freezer:. So far, thumbprint cookie; a cardamom tea cookie; pferffernusse/spice drops (I cover them with a citrus glaze instead of 10X sugar), ginger cookies, and still to be made chocolate chip.
 
The last few years I have been making big cookie trays and bringing them into work since my family prefers chocolate Chip over any others.
I work in a hospital and we are not allowed to any type of holiday celebrations or anything that will cause us to have more than a certain amount of people in the break room.
I am thinking about making 5 or so different cookies and putting them in individual baggies so my coworkers can just grab a bag and eat them whenever/wherever.

Thinking🤔 of what to include. I have so many I like so I need to keep reasonable and not too fancy so they don’t get smushed in a bag.

Coconut macaroons
Raspberry Thumbprints
Chocolate Crinkles
Frosted Sugar Cookies (bought a new Mickey Mouse cookie cutter to make Xmas Mickey cookies)
Gingerbread something?
Peppermint something?

I just found a new recipe for white chocolate pistachio cranberry cookies so I might include those.

Once I get in a Christmas cookie baking mood, I go totally overboard and will end up making every cookie on Sallysbakingaddiction.com. Love her recipes!

I will bring these to work mid-Dec. I also plan on making gingerbread cupcakes along with a gingerbread man atop to bring to work on Xmas Eve.
 
I'm planning to do Peanut Butter Blossoms, Chocolate Chip (with half chocolate chips and half Christmas M&Ms), White chocolate dipped Pretzel rods with Holiday sprinkles, and a new one I found on Facebook. that is Sugar Cookie Bar with a cream cheese frosting.

I don't need a ton of stuff - just enough to do tins for 3 neighbors.
