It isn't necessarily the most popular resort in WDW, but my family loves Saratoga Springs. Its a happy medium between the "full-on" Disney immersion experience and a quiet, very upscale resort. They have varying combinations of rooms, including one and two-bedroom suites with kitchens, so something there might be what you're looking for. It isn't cheap, unfortunately, but when you get a group much larger than four (esp with >2 adults) its gets a little tougher to find a good landing spot at WDW.
