2 Nights Enough for Vero Beach?

Planning next year's trip for 4 to 6 adults and we're thinking about a week at WDW and adding 2 nights at Vero Beach to unwind before heading back to work. Is 2 nights enough or do we need 3? For those of you that end your trip at Vero Beach do you still use MCO airport or something else?
 
This year we ended 2 Florida stays at VB, and once we stayed for 3 nights and the next time 2 nights. We enjoyed the 3 night stay better. We have never gotten into our room at VB much before 4, and so we have stopped arriving around noon, we stay at WDW and get to VB by 5. This works out better for us, but we really do want more time than just another day there, that's why we prefer 3 nights.

We used MCO both times, and this is probably because the cost and convenience of flying in/out of MCO is the best for us. MCO has a direct flight to Dayton, and after all of the years of stopping here or there, we really enjoy getting on and then being home in Dayton. Well, it may not be "enjoy" but it's an easier travel day.
