What’s for Dinner Tonight?

It's the Victoria Day long weekend here; kick-off to our summer, even if the weather isn't quite ready to cooperate. We'll be having our first BBQ of the season - strip loins (what we call your New York cut) and baked potatoes.

Coincidence: Victoria Day just featured in a Murdoch Mysteries episode I watched last night

Last night was a Mexican themed team dinner. Basically takeout beef and chicken fajitas with all the veggies with rice, beans, chips, salsa and guacamole. Very good. Tonight will probably be fast food on the road or maybe takeout at home, but we are looking at 10 pm or later arrival.

Tonight I will make chicken marsala and DD will make mashed potatoes, from scratch. This is a big deal; all 4 of us work long hours, so when we have mashed potatoes, they are usually instant. Not tonight!

Tonight DH will make us pan cooked butter chicken breast and baked potatoes.

Tonight will be Thai Glazed Chicken Wraps....but we aren't wrapping them.
Strawberries that need to be used.

Unless I am too tired and then I'm not sure.
Window coverings are still going back up.12 more to go and then everything needs to be moved back in place

We're grilling again, while we can. Blue cheese stuffed burgers & fries.

I'm also making some chicken & rice soup for DS to pull out of the freezer, when he's not in the mood to cook.

We finally had a rain free day so I spent most of the day planting. I made an easy dinner but at least it wasn’t takeout. Pasta with meatballs, salad, and a baguette.
