The ALDI budget recipe thread!

I've recently became an Aldi shopper, after reading the glowing reviews here on the Budget board.

With so many of us shopping at Aldi, I thought it would be a good idea to start a thread where we could post our recipes made ENTIRELY of Aldi ingredients.

Here's the rules...all of the ingredients in your recipe must be available at Aldi. Exceptions made for spices (since Aldi has a limited selection of those).

Pull out your best ideas and post them. I hope we can all share new ideas of what to make with our Aldi budget finds. I'll start us off with something I made last week.




Low-Fat Chicken Veggie Delight


This makes a LOT...I used a large rectangular electric skillet and it was full. I froze several portions for future lunches/dinners. If you want less, the recipe is easy to half.


Ingredients

3 lb bag boneless skinless chicken breast (cubed)
2 small Vidalia or sweet onions, diced
3 or 4 cloves of garlic, to taste (I used the minced kind in a jar...but regular garlic is available at Aldi)
4 red and/or yellow bell peppers, sliced
3 small zucchini, sliced
8 oz fresh mushrooms, sliced
3 16 oz cans of diced tomatoes (or fresh)
1 8 oz can tomato sauce


Directions

Cut chicken into cubes. This is easier to do if the chicken is still partially frozen. Add to extra-large skillet along with diced onion and minced garlic. Cook over medium heat. At this point, add whatever seasoning you like. I used a heavy sprinkle of onion and garlic powder, a dash of black pepper, and about a teaspoon of Creole seasoning.

Cook chicken, onions, and garlic until almost done. At this point, add the bell peppers, zucchini, mushrooms, canned tomatoes, and tomato sauce. Cover skillet, lower heat, and simmer for about 15-20 minutes, until veggies are tender.

I eat this plain, but my family eats it over rice or pasta. Freezes well. This is also good made with lean ground beef.
 
Oh my gosh, I could post SO MANY! I subscribe to a service that actually gives me a weeks worth of menus AND a shopping list exclusive to Aldi's so I know EXACTLY what I'm going to spend every week. For 7 dinners the shopping list is approx $60.

Best service I've EVER come across...and totally worth the $1.25 per week. No thinking involved, just cross off what I already have on hand off the list and add anything I need for breakfast, lunch, and snacks. I've kept my grocery bill well under $100 a week for a family of 5.

Here is one recipe we've tried:

Smokey Apricot Chicken
3-4 chicken breasts, thawed
1/2 c apricot preserves
(1 T soy sauce, 1 T liquid smoke)


5 med red potatoes, peeled, quartered
1/4 c chopped red onion
1/2 c diced grape tomatoes
(4 t olive oil, 4 t red wine vinegar, 2 T mayo,
1 t dried thyme, salt, pepper)

1 head broccoli
(Butter, salt)

Place all chicken breasts in large baking pan.
Season w/ salt and pepper. Combine preserves,
soy sauce & liquid smoke in a bowl. Pour over
chicken to coat. Bake 25 min, @400.

Boil quartered potatoes for 10+ min until
tender. Drain. Toss w/ tomatoes and onion; add
remaining ingredients. Keep warm to serve.

Steam broccoli until tender-crisp and serve
with butter and salt.

Easy Chili

1/2-1lb ground beef
1 onion chopped(I use 1/4c. dehydrated onion from spice aisle)
3 cans diced tomatoes
3 cans kidney beans(or substitute mexican hot beans for some cans for spicier)
1 packet taco seasoning

Brown ground beef in a large saute pan and add onion and saute. Now you have two choices. If you need dinner soon you can open everything else and throw it in a stockpot, stir, cover and cook for about 30 minutes. Or throw it in the crockpot and cook it on low and it will be ready when you are. That's it!

Everyone raves that it's the best chili and it's just a bunch of cans dumped into the crockpot and a packet of taco seasoning from Aldi. :rolleyes1

Ok, I am going to cheat!

Last night we had their take and bake pizza (pretty good), a bag of their tossed salad, and 1/2 pack of their fit and active ice cream sandwiches!

I never heard about ALDI's and I just found one near us, so I'm gonna try it today!

This is my recipe for salsa, and it tastes different if I used anything other than ALDI canned tomatoes....

1 can stewed tomatoes with juice- chop the tomatoes
1 can diced tomatoes with chiles (with juice)
juice of 1 lime
diced white onion- 1/2 medium onion
diced yellow pepper- 1/2 pepper
chopped grape tomatoes
cilantro (just a pinch because I don't care for cilantro)

I serve this with their blue chips- it is my favorite summer snack. If you wanted to make an entire meal, it's good as filler in a flour tortilla shell with cheese and sour cream (and you could add meat if you wanted, but I prefer veggie wraps).
 
This isn't really a recipe, but it is a dinner that I put together using only foods bought at Aldi!

2 sirloin steaks (about 1/2 lb each)
1 1/2 cup chopped fresh mushrooms
1 chopped yellow onion

1 box of potatoes au gratin
(milk bought from Aldi, margarine bought from Aldi)

Can of Spinach (seasoned with garlic and cayenne)

I just cooked up the steaks for a bit in a pan (seasoned with pepper, garlic powder, a bit of paprika - salt after they've cooked), took them out, threw in some mushrooms and onions (and a bit of Worcestershire sauce) and cooked those down while the steaks rested.

Before cooking the steak, I made the potatoes au gratin and threw them in the oven. I also put the spinach in the microwave with seasonings.

Everything was done at once, simple, great meal!! All from Aldi! :worship:
 
Here are several I make:

Chinese Pot Roast
3 lb + chuck roast
1 medium onion, chopped
1/2 c soy sauce, 1/2 c water, 1 t ginger

Steamed white rice
1 bag frozen stir-fry vegetables

Place roast and onions in crock pot.
Combine soy sauce, water, and ginger. Pour
over meat. Cook on low 6 hrs.
Serve with rice and steamed stir-fry veggies.

Nacho Bake
1 lb ground beef
1 can diced tomatoes, undrained
1 pkt taco seasoning
1 cup sour cream
11 oz pkg tortilla chips, 8 cups
8 oz pkg shredded cheddar

Cook and drain ground beef. Add tomatoes,
half cup water and taco pkt to ground beef.
Cook uncovered, 10 min. Stir in 1 cup of sour
cream. In 13x9, place " of chips, then " of
meat mixture and " of cheese. Repeat layers.
Bake @350 for 10 min.

SOOOOO Good Chicken Enchiladas
1 can refried beans
10 flour tortillas
1 can cream of chicken soup
8 oz sour cream
4 chicken breasts, cooked, cubed
8 oz shredded cheddar cheese
1 jar salsa con caso
1 bad salad greens
(1000 Isle drsng)
Small bag tortilla chips
Spread 2 T of beans on each tortilla.
Combine soup, sour cream, & chicken. Spoon
1/2 cup down the center of each tortilla; top with
1-2 T cheese. Roll up and place seam side
down in a greased 13x9. Pour con caso over
top; sprinkle w/ remaining cheese. Bake,
uncovered, @ 350, 35 min, until heated through.
Drizzle salad w/ dressing. Serve with chips

Chicken Parmesan with Penne Pasta (and sides)
1 to 1.5 lbs chicken breast, cut into tenders
26 oz jar spaghetti sauce
8 oz shredded mozzarella
(8 T grated parmesan)
12 oz whole wheat penne pasta
1 Caesar salad kit
1 pkg frozen garlic Texas Toast
Combine sauce and 6 T Parmesan in 13x9
casserole dish. Fold in uncooked chicken.
Cover; bake @375, 30 min. Uncover. Top with
mozzarella and sprinkle w/ 2 T Parmesan.
Return to oven to melt.
Serve chicken / sauce over cooked penne.
Serve with Caesar salad and hot bread

Southwest Turkey Burgers
1 avocado, peeled and pitted
( 3/4 c mayo, 2 cloves garlic)
2 lbs ground turkey
1 c salsa
8 oz sliced pepper jack cheese
1 pkg sandwich buns
1 c fresh chopped cilantro
1 large tomato
1 bag frozen fries
Combine avocado, mayo, & garlic. Mash
until blended. Salt & set aside. Combine turkey
and salsa. Form into 6 patties. Cook in no-stick
skillet on med-hi, 4 min each side. Top w/
cheese to melt. Spread toasted buns w/
avocado spread & sprinkle w/ cilantro. Top w/
burger & tomato slice. Close & serve.
Bake fries as directed.

Knock off Pasta e Fagioli (Olive Garden)
1 lb ground beef
1 c each diced onion, carrots, celery
(2 t bottled minced garlic)
1 can kidney beans, not drained
1 can butter beans, not drained
4 - 8 oz cans tomato sauce
1 can beef broth
(1 T vinegar, 1 1/2 t salt,1 t Italian seasonings)
8 oz macaroni
1 loaf garlic bread
In large soup pot, brown beef along with
onions, carrots, celery and garlic for 10 min.
Drain grease. Add remaining ingredients except
pasta. Simmer 30 min. Cook pasta al dente.
Add to soup and simmer.
Follow pkg directions to heat bread. Slice into
sections. Serve hot!

Grilled Italian Subs
1 pkg Italian sausages
2 green peppers, sliced
1 onion, sliced
1 pkg hoagie rolls
(1 T butter, mustard )
1 pkg chips, any
1 jar applesauce
Grill sausages. In a skillet melt butter and add
green peppers and onions. Sauté until tender.
Place cooked sausages in rolls and top with
vegetables. Add desired amount of mustard.
Serve with chilled applesauce and chips.

Smothered Chicken
4-6 boneless skinless chicken breasts
4 oz can sliced mushrooms, drained
1 c shredded cheddar cheese
1/2 c green onions, chopped
1 pkg real bacon bits
(Garlic powder and seasoned salt to taste,
1 T vegetable oil)
1 bunch broccoli
1 pkg fresh strawberries, cleaned and sliced
Flatten chicken to " inch thickness. Sprinkle
with garlic powder and salt. In a nonstick skillet,
brown chicken in oil for 4 minutes and the turn
for other side. Top with the mushrooms,
cheese, green onions and bacon. Cover and
cook until chicken runs clear and the cheese
melts.
Serve with steamed broccoli and sliced
strawberries.

Pepperoni Pockets
2 cans crescent rolls
12 oz shredded mozzarella
4 oz sliced pepperoni
(1 egg white, 1 t dry mustard, 1 t garlic salt,
1 t pepper, 4 t Italian seasoning)
2 oz Spaghetti sauce for dipping
1 cantaloupe
1 bag chips, any
On cookie sheet, divide triangles Brush each
w/ egg white. Sprinkle spices evenly, then
cheese, then pepperoni. Top each with second
can of rolls. Pinch sides together to make a
pocket. Brush egg white on top. Bake 12-13min
or until golden brown @350. Serve w/ warmed
spaghetti sauce for dipping.
Serve w/ diced cantaloupe and chips

Apple Baked French Toast (with Bacon)
5 apples, peeled and diced
(1/2 c sugar, cinnamon)
1 pkg Baguette bread, use both loaves & cut in 2
inch cubes
8 eggs
(3 c milk, 4 t sugar, 3/4 t salt, 1 T vanilla)
(4 T melted butter, cinnamon/sugar)
1 lb bacon
Place bread cubes tightly in greased 13x9.
Beat eggs, milk, sugar, salt, & vanilla. Pour over
bread; cover. Refrigerate 6-36 hrs. Bake
uncovered @350, 45 min. Remove and baste
with butter. Sprinkle generously w/ cinn/sugar.
Return to oven 5-10 min. Mix apples & sugar.
Sprinkle w/ cinnamon. Heat apples in
microwave; stir. Spoon over Fr toast servings.
Fry bacon to desired crispiness

Blackened Salmon With salad and Rolls
1.5 lbs salmon filets, or tilapia
(Blackened seasonings)
1 can orange rolls
1 bag salad greens
1 tomato, diced small
1 cucumber, diced small
1/2 jalapeno pepper, diced very small
(1/4 c diced onion, 1 t dried cilantro, salt)
1 bottle raspberry vinaigrette dressing
Season the top side of salmon w/ blackened
seasonings. Grill or broil, each side 5-7 min or
until meat is flaky. Test w/ fork.
Prepare rolls as pkg directs.
In a bowl, toss tomato, cucumber, pepper,
onion, cilantro, and salt. Set aside.
Arrange a bed of salad; drizzle with Raspberry
vinaigrette. Top with a portion of salmon. Serve
tomato/cucumber mixture next to salad.

I haven't fully explored, but it looks like you can choose the recipes you want and then it will create a shopping list based on the layout of your local Aldi. It says there are more than 6,000 recipes available. It's free to sign up.

I used to subscribe to this, but I didn't like the meals. They were NOT the healthiest meals. I switched to a "low fat" meal, but it wasn't for Aldi's. I ended up just dropping the service.

I am sure some of them aren't the healthiest, but I substitute with low fat/low cal items when I can. I definitely don't consider myself a health fanatic by any stretch of the word, but we eat a TON of fruits and veggies over the summer so I am able to substitute with what produce we have on hand.

Again, I pretty much use it as a guide and have found it worth the 1.25 a week it cost me.

Again...we're talking Aldi's here, so there aren't several options of "healthy" alternatives:hug: that you'd find in other stores either.
