Need an easy but good cornbread recipe - thanks!

Dh's family is coming for thanksgiving. dh asked me to make cornbread. I asked if wanted sweet or dry :scared1: was his face - what do you mean? I said, the cornbread you want when you eat it, is it sweet tasting or not? :confused3 "I just want it good."

So DIS folks, can you help me with some "good" but easy cornbread recipes to make for my sweet but dork of a dh? thanks!:rotfl2:

Okay, I've tried bunches of recipes (they're all fairly easy to make) -- Jiffy's still the best. It's a bit on the sweet side.

Krusteaz makes a fat-free one that's pretty good as well.
 
I use the recipe on the back of the Quaker cornmeal box, except it calls for different amounts of cornmeal and flour but I just use 1 cup of each. And I include the optional sugar.
 
I use a mix that never fails, Krusteaz. The recipe says vegetable oil or butter, but butter tastes much better.
 
I make from scratch. I mix 2 TBS honey with 1 can cream of corn along with baking powder et al. from the usual recipes

IMHO, the creamed corn makes it moist.
 
If you have a Trader Joe's nearby, I think their boxed cornbread is the BEST I've ever had, we all love it, it's slightly sweet and not at all dry.

I use the Jiffy stuff too. We are fairly "new" cornbread eaters here, just in the past few years. I've never made it from scratch. I am trying a cornbread stuffing for Thanksgiving this year though. Last time I made cornbread they were out of the Jiffy and I tried a Betty Crocker or something brand, not good.
 
From "The Baking Coach" (www.bakingcoach.com)

1 cup flour
1 cup yellow cornmeal
2/3 cup white sugar
1 tsp salt
3 1/2 tsp baking powder
1 egg
1 cup milk
1/3 cup vegetable oil


Preheat oven to 400 degrees.
Spray or lightly grease a 9" round pan.
In a large bowl, combine flour, cornmeal, sugar, salt and baking powder.
In a small bowl, lighly beat the egg. Add the milk and vegetable oil until well combined.
pour into prepared pan.
Bake for 20-25 minutes or until a toothpick inserted in teh center of the loaf comes out clean.

I made two batches for a total of 4 round pans. Everyone loved it.

Btw, a PP mentioned using Quaker cornmeal. I have that and followed the recipe on the container. It came out very dry and light colored compared to the above recipe. I won't use Quaker's cornmeal again. The bagged cornmeal seems to work best, IMO.

The Baking Coach is a small local company that goes to different libraries and offers cooking classes so there won't be too many recipes on the site. The recipe above is from the handout I received when I took the cornbread class at my library.
 
My granny made cornbread for lunch every day for about 50 years. She used Tenda Bake corn meal (not the mix). That's what I use, and it's delicious -- just follow the recipe on the box.

She made biscuits every morning for breakfast. At supper, they had the leftover biscuits and the leftover cornbread.

I keep Jiffy in my pantry to have with chili and stuff like that, but it's not on the same planet as this. If you decide you must use a mix, stay far, far away from those cheap little pouches as they're pretty close to inedible.

As a southerner, to a yankee, no offense, I promise. NEVER, NEVER,NEVER, use sweet cornbread for corn bread dressing. Cornbread stuffing or dressing is our specialty. I use Martha White corn meal mix, and do the southern cornbread recipe on the back. People love it, I mean they LOVE. it. Sweet cornbread in a stuffing is not good. Every year after Thanksgiving, there is a thread about "what did I do wrong" and 9 times out of 10. they used Jiffy or some other form of sweet corn bread.

I use more cornmeal than flour. I also pour the batter into a hot cast iron skillet that has been greased with about 2 tbs. of crisco shortening. (You want a nice sizzle) Then pop it in the oven. :thumbsup2
 
I but the mix they sell at Costco. Everyone here loves it!

Oh, I love me some Jiffy, I really do. But for stuffing, just get the Martha White Cornmeal mix, or another brand that is similar. You add in some eggs ,oil and milk, the big difference is there is no sugar and it tastes completely different it is also a lot drier, so don't think you have messed up if you taste it. I only use this for stuffing/dressing myself. I do prefer Jiffy for just eating cornbread with something.

Ok, I will look for no-sugar stuff. Chances of having that brand here is slim. I think there were only two brands in our store when I went last :lmao:. Thanks!

Here's a cornbread recipe that's easy to make and so, so good (and very moist!!) I'm always getting compliments on this.

Mexican Cornbread

1 cup cornmeal
1 tsp salt
1/2 tsp soda
1 cup milk (better to use whole)
1 small can creamed corn (~8oz)
1/4 - 1/2 cup bacon drippings (I use regular crisco oil)
1/2 lb grated cheddar cheese
2 eggs, beaten
1 medium onion, chopped
1 or more jalepeno peppers, chopped (can leave out)

Mix cornmeal, salt and soda. Add milk, corn, cheese and egg. Stir well. Add onions, peppers and bacon drippings or oil. Bake for 350 degrees for 50 minutes.

I cook mine in a cast iron skillet. As a previous poster mentioned, I add a few tablespoons of oil to the pan and heat up for a few minutes. I then add the cornbread mix and bake. The heated oil in the skillet gives it crunchy texture on top.

That's just my experience with Quaker. Usually their stuff is good, but I was very dissapointed with how the cornbread came out as was DH and DS9. After that experience I was not to keen on trying to make cornbread again. That is until I went to a cornbread class.

After I made the recipe that I posted, DH, DS9, my mom and aunt and uncle loved it. DH and DS9 were practically begging me to make it again for Thanksgiving, LOL. They were very happy when I said yes.
