Looking for chicken breast slow cooker recipes!

As a very busy single mom, it would be really nice to pop some chicken in the slow cooker and have it ready when I get home. Any great recipes out there using chicken breasts? Any ideas for non-beef slow cooker receipes? TIA!
 
I know some people here just put boneless chicken in the slow cooker with salsa & then shred it for tacos or anything else Mexican. I tend to do mine without anything & shred so that meal prep is minimal.

But for actual recipes, how about these:

3-Cheese Chicken & Noodles

3 c chopped cooked chicken
1½ c cottage cheese
10¾ oz condensed cream of chicken soup, undiluted
8 oz wide egg noodles, cooked and drained
1 c grated monterey jack cheese
½ c chicken broth
½ c diced celery
½ c diced onion
½ c diced green bell pepper
½ c diced red bell pepper
½ c grated parmesan cheese
4 oz sliced mushrooms, drained
2 Tbl butter, melted
½ tsp dried thyme leaves

Combine all ingredients in slow cooker. Stir to coat evenly. Cover and cook
on Low 6 to 10 hours or on High 3 to 4 hours.
Makes 6 servings

I tried this after people here said they had successfully cooked noodles in the slow cooker. (I was skeptical.) I think, though, that they recommended not adding the noodles until the last half hour maybe? I didn't make a notation on that though. Sorry.

Five Flavors Chicken - Crock Pot

3 - 4 lb chicken, boneless
2 cloves garlic
½ c honey
1½ tsp ginger, ground
½ c soy sauce
3 Tbl sherry
½ c crushed pineapple with juice (opt)
2 Tbl cornstarch
Mix garlic, honey, ginger, soy & sherry. (Can substitute orange or cranberry juice.) Dip chicken into mixture. Place chicken in crock. Mix pineapple with sauce & pour over chicken. Cook on low for 6 hours. Remove chicken. Blend cornstarch into juice; cook to thicken.

This one is really good! We serve it over rice.
 
An easy one is to put chicken breasts in the crockpot and then dump in some condensed soups and cook it all day on low--then serve over no yolk egg noodles. Easy! (I usually use either condensed cheddar cheese soup or condensed cream of chicken...or sometimes I do one of each)

Do you brown the chicken before putting it in the slow cooker or just put it in raw?
 
I've never browned anything I put into the crock. :rotfl: To me the whole idea is time/labor saver and that would defeat the purpose. I've noticed that a bunch of the roast recipes suggest you do it, but as I've said, "What's the point??" LOL

I wouldn't do it for chicken especially, though. I like my chicken to be tender & browning it would make the outside "hard" (for lack of a better term) wouldn't it?
 
Here is one that is always a hit at my house

Swiss chicken

4-6 boneless chicken breast halves, you can add an extra if needed and if it will fit in your slow cooker

1 can of reduced fat cream of mushroom soup
1/2 can skim milk
6 slices of swiss cheese,low fat is fine
2 cups of pepperidge farm stuffing mix, blue bag
1/4 cup melted butter, I use light smart balance

Spray slow cooker
place chicken in cooker
top with cheese slices
mix soup and milk pour over chicken and cheese
put stuffing mix over all of these items and then drizzle melted butter over the stuffing

cover and cook high for 4 hours or low for 6 hours

serve with a salad
 
here are my 3 easy chicken breast crock-pot recipes. I never brown my chicken breasts, in fact I usually put them in frozen.

peel & chop 1 or 2 sweet potatoes, put in bottom, of crockpot.
put frozen chicken breasts on top of it.
pour 1 can of drained/rinsed black beans on top of chicken
pour 1 jar of salsa (i use newmans' pineapple) on top of everything.
This makes yummy filling for burritos or i just serve it with homemade
guacamole & some sour cream.:thumbsup2


put frozen chicken breast in crockpot & cover with 1 can of soda (i use diet coke or diet gingerale)
about 1/2 before we are ready to eat I take the chicken out, drain the soda, shred the chicken, add it back to the crockpot with our favorite BBQ sauce.
I serve it with homemade cornbread & a veggie, or it makes yummy sandwhiches. Last night we made this but we made BBQ chicken nachos, which were excellent.:thumbsup2

Cut up 1 small pepper and onion into strips & put in bottom of crockpot.
put frozen chicken breasts on top.
pour a jar of your favorite spaghetti sauce. (i have tried them all and my favorite is actually the store brand for this recipe:confused3 )
Serve over pasta for a quick chicken caccitore(sp?) Sometimes I add a little red wine over the pepper and onions.

HTH! I love :lovestruc my crockpot! I use it 3-4 times a week!
 
Chicken In a Pot
1 lb raw chicken breasts
3 dry Good Seasons italian dressing packages
2-3 small cans of cream of chicken soup or 1 large
2 cream cheeses
white or brown rice

Put chicken in crock pot (raw), put dry Good Seasons on top, cook for hours, about an hour or hour and a half before eating, take a spoon or spatula and break up chicken(should be easy to do-it will be very tender). Then add cream of chicken and cream cheeses. Cook until all warmed through, serve with rice. My DH likes peas with it, I don't, but you could serve whatever veggie you like. This is not a glamorous meal, but very good and tasty, especially in the winter. You may change the amounts of cream of chicken and cream cheese to suit you. My DM likes 1 cream cheese, but it is richer with 2:goodvibes Enjoy!!
