Fried Rice Recipe?? Baked Beans recipe???

Does anyone have a good fried rice recipe?? I have a recipe but its pretty boring. We're having a surprize 25th for my sister and we need good side dishes. I thought fried rice and baked beans would be good and they would stretch. We anticapate 75-100 people. Thanks for your help.
 
2 lbs navy pea beans - soaked overnight in a bowl and generously covered with water. Make sure you have a lot of water as they do expand and you want them to stay covered.

1 cup molassas
1 cup brown sugar
1 large onion chopped
1/4 cup prepared mustard
pepper to taste - 1/2 teaspoon
1 piece of salt pork cut into cubes about 1x1 inch. If you prefer, you could substitute a 1lb of bacon cut into cubes.

I used a large crock pot to cook mine in for the 4th of July and it worked great!

Basically drain the soaked beans and dump them and all the other ingredients into the pot, cover with water just to about 1 inch over the mixture and cook on low for 12+ hours. I cooked mine a lot more that 12 hours because I didn't soak the beans. I boiled them for about 1/2 on the stovetop and then put them in the pot. but soaking is the best way to soften and hydrate them back to life.

email me if you have any questions. We had about 30 people here and didn't have any left. I had a lot of side dishes though so you may want to make batches and then just reheat them the day of the event.

Sorry, I'll fix it

1/4 cup. This can be greater or less depending on your taste.

The Top Secret Recipes site had the KFC clone up for the 4th of July . . .

2 15-ounce cans small white beans (with liquid)
2 tablespoons water
1 tablespoon cornstarch
½ cup ketchup
½ cup dark brown sugar
2 tablespoons white vinegar
4 teaspoons minced fresh onion
2 pieces cooked bacon, crumbled
½ teaspoon dry mustard
¼ teaspoon salt
dash pepper
dash garlic powder

1. Preheat oven to 350 degrees.
2. Pour entire contents of two 15-ounce cans of beans into a covered casserole dish.
3. Combine the water with the cornstarch in a small bowl until cornstarch dissolves. Stir mixture into the beans.
4. Stir the remaining ingredients into the beans and cover the dish.
5. Bake for 90 minutes or until sauce thickens. Stir every 30 minutes. Let beans sit for 5 to 10 minutes after removing them from the oven before serving.
Makes 6 servings.

For Fried Rice, we just use Chicken Helper. To 2 boxes, I add a can of bamboo shoots, a can of water chestnuts, 1 lb frozen peas, a bag of Snow Peas & a can of baby corn - that's in addition to whatever fresh stuff I have in the frig...like mushrooms (or canned), red peppers, broccoli. I've also tossed in leftover whole green beans. I always use shredded, cooked chicken, but if I'm using anything fresh I saute the stuff where the directions say to do the chicken. This is quite popular here - and the kids fight over the leftovers! ;)
