EGGS!!! In Chicken Salad?!

I know this isn't budget related, but I didn't know where else to post it.

My husband insists on eggs in his chicken salad. What do you put in your chicken salad? I like a few spices, mayo, maybe some sweet pickles, or nuts, maybe apple. ANYTHING but eggs. I need to find something to put in chicken salad, which we eat alot because my dh loves it besides eggs! He insists that "all the guys at work have eggs in their chicken salad". I don't buy it.

Putting eggs in chicken salad is like giving Pudge a tuna fish sandwich. It's just not natural.

Opinions?
 
Hi, No eggs in my Chicken Salad! I put roasted chicken,celery,shallots,dried cranberries,mayo, Dijon mustard,salt and pepper. Also I like tomatoes and lettuce on my bread when making a sandwich. :) Joan
 
I never put eggs in my chicken salad. I like spices, chicken, mayo, grapes, and walnuts.
 
chicken,grapes, eggs, sweet pickles, dash mustard, and mayo. It is none left at all at my house. The kids will this breakfast, lunch, and dinner if i let them. LOL
 
I put chopped onion, red grapes, mayo, and sunflower seeds in mine. No eggs. :thumbsup2
 
No...I do hard bolied eggs in tuna salad but not chicken.
 
I LOVE eggs in my chicken salad! It makes it so very rich! I once made some to take to work and one of the guys ate almost a whole bowlful himself because he said it was the most wonderful thing he had ever eaten. It must be a guy thing, even though I am not a guy!

I HATE fruit and nuts in my chicken salad, so I guess its just a taste difference. It really wouldn't be that big of a deal to make 2 different kinds to make him happy. Make it the way you like it and then make some with eggs for him too.
 
Since I have a fatal egg allergy :sick: I can say that I have honestly seen it both ways. While I would never think of putting eggs in it, we have a local restaurant that does. My problem is when there's too much celery seed in the place of celery. Just put celery in it!!! or when the salad is too chunky. We don't need to put everything in it :rotfl:
 
Not to hijack your thread OP, but what kind of chicken are you using? I have used canned chicken, which is OK, but tends to get watery. I'm not a fan of boiled chicken (which is what my mom does and then shreds it). So I'm looking for some ideas? Can you boil it with some spices? I think that's what I don't like about the boiled chicken....it's so plain and icky. What about cooking some in the crock with some broth and then shredding it?

Any ideas???
 
I think eggs are gross in chicken salad -- of course I think hard-boiled eggs are gross in anything. That is one strong smell. I also think onions are something to be omitted from chicken salad.

I use celery, mayo, nuts, salt and pepper, a splash of lemon juice and either grapes or apples. Sometimes I add curry powder. White meat only, please. The breasts from a rotisserie chicken are great in chicken salad.

I think the chicken salad is the one gross item at Chik Fil A, but you folks who like eggs in it might want to try it as it's quite inexpensive.
 
I put eggs in mine. I use chicken, chopped celery, light mayo, finely chopped boiled eggs, and some spices. Sometimes I add chopped pecans too!

Just to make it budget related, eggs can cheaply stretch the amount of chicken salad. I generally do not add them to chicken salad, but do add them to tuna. I think they taste just fine in a chicken salad too.

Leftover fried chicken makes the best chicken salad!

You could also poach it in some seasoned chicken broth.

I usually roast mine, sprinkled with poultry seasoning -- adds great flavor!
 
We've always put hard boiled eggs in chicken salad (tuna salad too) - I didn't know there was any other way to make it! I've seen green grapes in chicken salad - and I have to say it was very good!

Maybe this should be a poll!
 
Chicken, mayo, a little honey mustard, chopped onion, celery or celery seeds, sweet pickle relish, salt, fresh ground pepper and bacon. Yes bacon. Bacon makes everything good, right??? You can use the real bacon bits (not the imitation bacon bits) but chopped bacon is better. Now I want chicken salad! :upsidedow
 
I have to say I have never heard of putting fruit in chicken salad! I boil boneless breast of chicken shred it until its fine add diced celery, pepper, celery seed, pickle juice and Mayo, everyone raves about how good it is. (no egg either!)
 
Well at least I know I'm not crazy...lol. And I guess neither is he. Usually I use a rotisserie chicken for the extra flavor and boil some eggs for him to add to his. He's the only one in our family of 5 that likes eggs in his chicken salad. Since I low carb, I really can't use the grapes or apples anymore :( So I'm gleaning some ideas from you guys.
