Easter Dessert Ideas Needed

We are making a bunny cake.
 
Lemon cake with white chocolate mousse and strawberry filling covered in Lemon Buttercream icing.
 
We haven't done it in a while, but DD loves to make a Jello poke cake at Easter.
 
This isn't necessarily a traditional "Easter" dessert, but OMG was it good!!! And easy enough for your child to make.

Bake up a boxed chocolate cake mix
When still hot out of the oven, poke holes all over the cake (I used a butter knife) then pour a can of sweet condensed milk and a jar of caramel ice cream topping. Let cool. Once cool, spread with a tub of Cool Whip and then sprinkle with a bag of Heath Toffee Bits.

SOOOOO GOOD!!!

Seriously, I've got to find an occasion to make this, preferably when lots of people are around so I can't eat it all by myself, which I would want to do!

Oh my, I think I just fainted just thinking of eating something so yummy. Do you mix the milk and the caramel, or pour 1 then the other?
 
I'm doing whoopie pie type things, but making cookies with the spring cake mix and putting rainbow chip icing in the middle. I'll put jelly beans around the plate too.

I poured the milk first then the caramel. I actually found the recipe in a scrapbooking/stamping catalog and ran right out that day to buy the stuff to make it. It DID NOT last for more than a day & 1/2 at my house. I will probably never make a traditional cake with frosting again. LOL

This cake is sometimes called "Better Than S*x Cake" and it was a real fad around here a few years ago.

Also very easy for easter - make a box cake mix in a 9x13 pan (any flavor) top with white frosting. Then take shredded coconut and dye it green with food coloring and spread on top. Add a few jelly beans and you are done.
 
We usually have carrot cake, something about carrots and bunnies just says Easter to me...but I don't make it, my FIL gets it from a bakery. Happy Easter!
 
Here's what I am making for Easter dessert.

Angel Food Bliss

1 angel food cake cut in half
1 (20 oz.) can pineapple, crushed
1 (3 1/2 oz.) pkg. Jello vanilla instant pudding
1 container Cool Whip
Assorted fruits such as blueberries, strawberries, bananas, kiwi

Mix together pineapple with juice and pudding. Fold in Cool Whip. Spread between halfs of angel food cake and over the top. Decorate with fruit. If I use bananas, I toss them with a little lemon juice to keep them from turning brown.

Here is the last one that I made. Pretty to look at and oh so good!!!!

I think the name that was on this recipe card said Better than Anything Cake. Maybe they did mean s*x, but since it was in a scrapbooking catalog, they had to say something else. LOL

Bunny cake! Wicked easy: bake 2 round cakes, when they cool, cut one circle into two ears (you'll be left with a bow tie!) and then arrange and frost. Jelly beans for eyes and nose. I'm sure you can find precise directions online.

This is what I do. I have had jello cake every Easter for at least 30-35 years. Well, I think I missed 1 year when we were on vacation on Easter Sunday

Lemon or yellow cake, w/ lime jello pokes. Icing is lemon pudding, and cool whip--NUMMY!!!

PS. We tried fractured prune and loved it!!

You just mix the dry pudding mix with the crushed pineapple, then fold in the Cool Whip. It's a really easy dessert!!!
