Downtown Disney "late night"?

So, I'm trying to make a plan for our May Girls Trip for Tinkerbell Half Marathon Weekend and I'm kind of confused.

I arrive early on Wednesday and will be checking in to the hotel and hanging at the parks. My friend doesn't arrive until 9ish on Wednesday night, so best guess is she won't be at the hotel until 10 p.m. or there after.

I see Downtown Disney is usually open until 2 a.m. - but all of the restaurants say they close at 10.

Is anywhere open to grab a bite to eat? Or is it just the shops that are open until 2 a.m.?

I have found that odd too - I just booked a reservation for Tortilla Joe's for the night we arrive, to take in a little Disney before heading to the parks the next day, and they are open until 11PM. I know though the House of Blues is open until after midnight but I really don't know what is open after all the restaurants and shops close down. So I will be curious as well to hear what others have experienced.

It looks like many places nearby are open until 11:00PM.
The only sure bet is the Denny's (I know, right?) nearby which is open 24/7.

Denny's and the 2 IHOPs are 24/7. EOS is open later than most of the other restaurants in DtD. Most places seem to stop serving at 10pm, even though they are open until 11pm.

So ... what, exactly, is open until 2 a.m. at Downtown Disney if all the restaurants close at 11?

The AMC movie theater is open until the last movie gets out. And I think HOB is open until the last concert ends, but I don't know if they still serve food that late. Hours vary with DtD throughout the year, so more things seem to stay open later in summer. The latest closing time is 2am, but that doesn't mean that everything stays open until then all year long.
