To meet princesses you'll save time booking a character breakfast or dinner such as Akershus or Cinderellas Royal Table.

With a 3 and 5 year old, build in breaks each day.

If your 3 year old is potty trained, do a night at Lilos playhouse for them and take your wife out to epcot showcases (enjoy the details on your own) or take her out to a fancy restaurant.
 
Make your daily plan around your kids’ normal schedule. If your kids are early risers do rope drop. If they normally go to bed at 7 don’t push them to do too many late nights. Nap time out of the park is great (even if they don’t nap) because that’s the busiest and hottest part of the day. Leave before the meltdowns happen.
 
Book character meals if your kids want to meet characters that do them (Princesses / Mickey / winnie the Pooh / Stitch) Unless you don't like the look of the menu, it is the most time effective way of meeting, and uses up less park time queuing.

When you book your ADRs match them up so you can see a pattern to follow for your FPs.
